Does anyone can their fruit without sugar...or have you canned using Splenda? Please share any recipes, advice, etc. as I'm diabetic and would love to know how.

I have never canned with splenda, I have to stay on a gluten free diet and splenda has maltodextrin in it...a no no for me. However, I have made strawberry jam, canned peaches, pears, tomatoes without sugar...
Libbie is right on, just get a copy of the Balls Big Blue book, I saw them at walmart last night, in the canning isle.
They have lots of recipes and tips....it is my canning bible.
Note: your canned fruits won't be so syrupy sweet! But still yummy and alot better than canned fruit you can buy.

I've never done this, but according to the Ball Blue Book, "Fruits may be canned with or without a sweetener...water or unsweetened fruit juice may be used in place of a sugar syrup. If unsweetened juice or water is used, the hot pack method must be followed..."

There's also a section called "special diets" in the Blue Book that has some recipes that you may want to try. Let us know how it works out! I'm always looking for low to no sugar recipes to try to slip into my family!!!
