Posted - Apr 13 2011 : 06:06:43 AM Holly, if you'll go to my website to the blog and look under 'canning and food processing' you'll find step-by-step pictorial canning instructions for waterbath and pressure canning. One of them has a video of how the pressure canner is supposed to sound. I understand your fear - was there many, many years ago, but I have now canned for 35 years. The trick is to use the right equipment, keep everything clean and to use good quality products. Just click on the blog link below if you are interested. :-)

Posted - Apr 12 2011 : 10:43:18 AM Looks great! I am in the middle of my first canning session as well. I took the tomatoes form our garden last year that I froze and made sauce. Processing now in their water bath as I speak! Hope it comes out as good as your chili!

I had a good time doing this, I had to try and stay inside that day (wind and sand here)...so decided to give this a try and was very pleased with the results!
