                Posted - Mar 25 2011 : 1:20:54 PM So..I'm trying to be so thrifty and healthy. DGD is gluten free, so I wanted to make a chicken soup using quinoa instead noodles. Southwestern recipe. And using leftovers. I had the broth, chicken, carrots, basil, etc. and quinoa. Of course, I misread the recipe. Instead of 3/4 cup quinoa..I put in 2 1/2 cups. 15 mins. later...Voila! Quinoa casserole.  So..bigger pan, lots more water, chicken base, lots of herbs. Now I have to invite a small village to supper. But its pretty (with just a hint of chicken and carrots.)
