I just bought a bag of amaranth at the health food store yesterday and came home and looked up ways to cook it. I tried popping it tonight. How on earth have I missed this tasty treat for so long? Does anyone else have ways they like to cook it?

I thorw it in soups when I cook one. It adds just another texture and flavor.
