Posted - Mar 16 2011 : 10:22:52 AM It turned out great! Such a pretty color. It is really yummy on shortbread. :) Next will be Dandelion Jelly, when they come up. And boy do I always have a good crop of those!
That's the project of the day. I will be using Aunt Jenny's recipe. I haven't never made it before, but looking so forward to it. My mom said her grandma use to make it every spring.
I'm thinking Violet Jelly, shortbread and tea this afternoon.

Posted - Mar 21 2011 : 4:20:15 PM Hey Margo, here is Aunt Jenny's recipe.
1 quart violet blossoms packed 2 1/2 cups boiling water, pour over violets and let steep 24 hours.
Strain To 2 cups of the infusion add the juice of 1 lemon (1/4 cup, strained), 1 box of powdered pectin and 1/2 teaspoon of butter. Bring to a rolling boil. Add 4 cups sugar, return to boil for 1 minute. Remove from heat, fill and cap jars. Process for 10 mins. Yummo! It is really good on shortbread!

Posted - Mar 18 2011 : 03:29:27 AM We don't have our violets yet, and I still have some jelly left over from last year! (I made dandelion AND violet jelly) It's always a great seller at craft fairs, and is so fun-it also makes great gifts. Can't wait to see how it turns out this year!

Posted - Mar 16 2011 : 7:15:25 PM I am so jealous! I made my first violet jelly last year and it was beautiful and delicious. I used violets from the yard next door because it was a foreclosure property and now I have a neighbor who will spray for weeds for sure! Nice to have a neighbor, boo to killing off my violet crop. Oh well, I have plenty of dandelions!
