We were going through our shelves and found three jars of applesauce we canned in 2009. The sides of the jar were sticky and messy like applesauce was oozing out of them, but we checked and the seals appeared to be good. My mom wasn't sure though because she said the seal could have been bad, but the sugar in the applesauce and the stickiness could have made them appear to be sealed. We opted to dump the jars, erring on the side of caution...but what do you guys think? Why would the jars have been sticky?

I would have done the exact same thing, Amy! I think it is much better to err on the side of caution! Especially if some from the same batch were fine. I have had some store bought apple sauce that we forgot about in the fridge for way to long. It didn't look bad but was half gone and when I took the jar out, because it was glass I wanted to save it and it had re-sealed itself! The button was even down! So I think there must be some anarobic bacteria that could displace air enough to re-seal. But that is just my supposition.

Thanks for the advice. I thought we had wiped them all down, and there were other jars from 2009 that were fine. So I'm not sure exactly what happened. I wish I had thought to check the seal button, I guess that would have told us, eh? :)

Do you wash your jars of applesauce after you have canned them? After they have cooled, I take the rings off and completely wash both rings and full jars in warm, soapy water to remove any residue from canning. Applesauce, apple butter and other fruits, sometimes allow some of the juice to escape in the canning process and so the jars get stuff on them that you really don't realize until later. However, if you had LOTS of stuff on the jars, that indicates that they could have leaked. If the seal button on the lid was down, then they probably didn't leak, but if the seal button was popped up, then the jars lost their seal.
