What about using something like this for cereal? My husband eats Kashi Go Lean Crunch - Honey Almond Clusters (something like that) for breakfast every morning. At nearly $4.00 a box, it's killing me! Where would I find "puffier" ingredients for cereals? What are those puffy things, anyway?

And, I'm all for granola over my homemade yogurt - and just dumped in a pile for a sweet/crunchy not-too-bad-for-you snack!

Peanut Butter Granola

6 Tbs. canola oil
1 cup peanut butter
1 1/2 cups brown sugar
7 cups quick oats

In a small saucepan, over low heat, melt together oil and peanut butter until smooth. Remove from heat and stir in brown sugar. Place seven cups of oatmeal in a large bowl and then pour peanut butter mixture over oats. Stir until evenly coated and place on greased cookie sheet. Bake at 350 degree for about 15 minutes, stirring every five minutes. Allow to cool and then store in air tight container.

The granola is also yummy as a cereal with milk or with yogurt.

Try the non-fat plain Greek yogurt with your granola. It's DELICIOUS and really good with granola and fresh fruit.

Ok ladies. I was reading this post this morning while drinking my coffee. I've always wanted to make my own granola. Love love love it, but hate buying it at the store. So I did it! I think I took a little from each of your recipes and whipped up a batch this morning. It's delish! A BIG thank you!

Two questions: 1) Is there a fairly easy way to make them into bars (do you press it into a brownie pan, bake, then cut)? 2) How long will this keep in an air tight container/ziplock (thinking my problem will be keeping it around. lol)?

I've added plain unsweetened yogurt to my shopping list. Can't wait to have some w/ my granola. Also have added dried fruit and sesame seeds on the grocery list to add for the next batch.

Thank you all. I didn't have some of the ingredients, but it turned out delicious. I finally got to feeling good enough to make it. The family loves it.

I use 7 cups dry ingredients (3-4 of which should be oats) and 2 of any wet ingredient. I think you could make the bars if you added a bit more liquid ingredients.

Here's my recipe - my family and our friends call it my "Wicked Awesome Granola." :) It's my twist on Amy Dacyzyn's recipe. Other than the syrup ingredients, I'm not too rigid about the measurements on the others (usually a little more generous with the "add ins," depending upon what I have in the cupboard). My guys and everyone we know loves and requests it! I can't wait to try some of these other recipes, too! THANK YOU, girls, for sharing! :)

¾ c. brown sugar
1/3 c. vegetable oil (I actually use Olive Oil - you can't tell!)
1/3 c. honey
5 c. oatmeal
1 c. dry milk
1 T. cinnamon (I usually add more - we like it cinnamon-y)
Pinch or two of salt
1 c. chopped pecans or walnuts (we prefer pecans)
1 c. wheat germ
1 c. coconut
Raisins, dates, craisins, mini chocolate chips, if desired

In saucepan, mix together brown sugar, oil and honey. Heat until sugar is dissolved.

In large bowl, mix oatmeal, dry milk, cinnamon, salt, nuts, wheat germ and coconut. Pour sugar mixture over dry ingredients and stir well with spoon. When sugar has cooled enough, I like to mix with my hands because it incorporates the sugar mixture better with the dry ingredients, but BE VERY CAREFUL because hot sugar can burn skin badly. When mixed well, bake in a 9 x 13 pan for 10 minutes and let cool. When cool, add raisins, dates, craisins or mini chocolate chips, if desired. Store in an airtight canister. Note: I will double this recipe, and bake half of the batch so that it's a little crunchier as it cools; then I mix both. The mix of crunchy and chewy is just irresistable! :) It's also really good heated up in milk on a cold morning - my DH loves it that way. And we use it with ice cream, on top of cobbler...lots of different ways.

Here's my recipe. My husband loves it because he can't have sugar, but he can have honey. I keep it in the frig because I use freshly rolled oats which breaks down and goes stale pretty fast at room temperature. I give the original recipe and then my additions to the recipe. I like mine better. More honey and more nuts and some salt! :-)

This is what I use:

3 cups old-fashioned oats
1 cup toasted wheat germ
1/4 cup slivered almonds
1/4 cup wheat or oat bran
3 tablespoons flaxseed
1/2 cup coconut
1 cup dried blueberries

1/4 cup honey
2 tablespoons canola oil
1-1/2 teaspoons vanilla extract
1 tsp almond extract

I put the first grouping of ingredients in a big roaster pan. then boil the remaining in a saucepan. Pour over the oat mixture and bake at 350 for 30-45 minutes. I like to substitue apples and walnuts for the blueberries and almonds and omit the almond extract too.

The nice thing about granola is that you can turn it into what you need. Here's a basic recipe:

6 cups oats
1 cup nuts (whatever you want - walnut, almonds, etc)
1/2 cup sesame seeds
2/3 cups vegetable oil
1/2 cup honey
1/2 cup packed brown sugar
2 tablespoons water
1 1/2 teaspoon vanilla extract

Toss everything together and pour onto baking sheets. Bake at 275 for 50-60 minutes stirring every 15 minutes.

Now the fun part. I go light on the brown sugar if I even put it in. If I don't have sesame seeds I don't worry about it. You can put in flax seeds instead. Once it is done, I mix in dried fruit. You don't want to do this before as it burns. You can add anything - raisins, apples, peaches, cranberries, let you imagination play.

As for as the 6 cups of oats, when I make this for the BF I do a mix of rolled barley, oats, and rye. Just measure for 6 total and it doesn't matter the combination. He loves this and no longer buys cereal.
