This was a "new to me" way to prepare beets and it is delicious!

Roast whole beets for one hour at 350 F. (leave 1 inch of the stems on the beets and wrap the whole beet in alum foil)

Remove the alum foil, blanch so outer skin falls off the beet. Slice the beets and place on shallow dish. Sprinkle with Balsamic Vinegar, dust with Feta cheese and broil for a few minutes until the cheese looks like it will begin to melt. Oh my, these beets were wonderful.

I love beets raw, canned, and pickled but roasted beets are my favorite, I will have to try this recipe. My daughter does not like beets, can't usually even stand the smell of them, but enjoys them roasted.

Meg - I knew about roasting beets, haven't ever blanched them. After roasting the skins peel off easily. I love beets, so will definitly be trying your recipe. Thanks for sharing!
