We just joined a CSA for the summer and are so excited about the box of fresh, organic veggies that we pick up each week. This week our box included garlic scapes (or "garlicues" as the farm calls them) and I immediately went to my MaryJanes Farm book and magazines for information. They're so good! Here's the recipe that the farm sent along with our box, we just cooked it up tonight and served it over some brown rice...yum!

From Rock Spring Farm in Spring Grove, MN

Beet Green, Kohlrabi, and Garlicue Saute

Beet greens
Kohlrabi
Garlicues (Garlic Scapes)
2 Tbsp olive oil
2 tsp tamari soy sauce (we used Bragg's Liquid Aminos)
1 tsp rice vinegar ("any vinegar will do" - we used white wine vinegar)

Slice the beet greens crosswise, but the kohlrabi into 1/2 inch pieces, and coarsely chop the garlicues. Heat the olive oil in a wide skillet, add garlicues and let them sizzle for a bit. Toss in the kohlrabi and cook, stirring, for one minute. Add beet greens and cook until well wilted. Toss in the tamari and rice vinegar and serve.

The word "garlicue" is SO cute! I'm just getting ready to harvest my 'scapes here - thanks for the recipe! It sounds really good. I'm excited about making garlic scape pesto, too.
