Posted - Jan 20 2011 : 8:58:35 PM I've been buying farm fresh eggs for almost 2 years now. I can't, for the life of me, get them to peel easily! UGH! I never had this problem w/ the icky, store-bought eggs I used to buy. I just can't figure it out! I've added salt, not added salt, cooked longer, cooked shorter, tried to peel warm and after they've been in the fridge for days.... it seems the problem is with the membrane between the shell & the white...it doesn't want to release?.?.? Any advice or tips & tricks will be greatly appreciated!

Posted - Apr 27 2012 : 3:10:57 PM Wow!!!!! I couldn't believe it. I actually even peeled an egg while still hot because I just couldn't imagine it was cooked through. It worked beautifully although I had to use a dishtowel to hold the egg it was so hot. I had to call my motherinlaw (my go to for cooking questions) just to tell her how well it worked. She then had to tell me she struggled to peel some eggs this week she needed for a salad and eventually had to spoon them out of the shells. She was very excited to hear my results. Thank you so much for making something so tough so easy.

Posted - Apr 04 2011 : 09:14:20 AM This is how I do it.. I take a saucepan, put about 2 inches of water in , add the steamer basket on top. I put in 8-10 eggs usually (whatever will fit) Put lid on, & bring water to a boil, then lower to medium heat for about 7-10 minutes. Remove from heat & let cool, or if you are anxious for a nice hot hard bolied egg, run cool water & peel. I have never had a peel stick since I have been doing this, whereas before, I wasn't even doing hardboiled because I was wasting half the egg.

Posted - Apr 04 2011 : 08:14:20 AM OK, on all these recommendations, I am going to try this. I hate making pitted deviled eggs. Framgirls give the best advice! PS DOes how many eggs you put in the basket make a difference??

We just started raising chickens for eggs last year and I never had trouble peeling the eggs that were store bought and half the egg white gets pulled off of the ones my girls lay. I will have to try the steaming method. Do I just buy one of those metal baskets that fold in and out? How much water do you use if your boiling for 10 min? Just to the bottom of the basket?

Posted - Mar 31 2011 : 2:36:55 PM Thanks for sharing the information on steaming your fresh eggs. I had the same problem on just a few of my eggs occasionally. . so I will try the steaming method. Wondered, saw that someone here mentioned putting salt in the water. . . I use about a teaspoon of vinegar when doing my hard boiled eggs, place the eggs into a pan, fill it with ice cold water enough to cover, add the vinegar, place on the stove. Once the water starts to boil, time it for 5 minutes then turn off the heat and let the eggs cool naturally. Then rinse under running water and peel.
Anyone else do it this way?

Posted - Jan 21 2011 : 11:12:38 AM I agree with everyone here - I gave up on using my girl's gems to hardboil until I heard about steaming - just pop them in your steamer basket and voila! easy-to-peel

Posted - Jan 21 2011 : 06:03:59 AM hey there, you are right. the skin inside is the issue. fresher eggs the membrane is tight. the older the egg and or chicken laying the weaker the skin. steaming works great. when in hurry if i just need an egg. i boil then crack in half and scoop. just a thought. happy days sherrye

Posted - Jan 21 2011 : 05:35:38 AM I have heard that the fresher the egg, the harder to peel. The store bought eggs are probably older. The steeming works good, I also dunk them in ice water after they are steamed.
