Since my chickens started laying again I have a ton of eggs in my fridge - we are having frittata for dinner, bread pudding for dessert and I'm making lemon curd tomorrow for January birthday gifts - then hopefully a couple of my egg customers will need more and I will be down to only a couple dozen in my refrigerator.
Oh and eggs benedict is on the list for next week - I may even try to make homemade english muffins.

You can also freeze eggs. They do not work so well for anything but baking, but it was great to have them when our Ducks stopped laying during the winter months. I used to freeze them in individual packages according to recipes for baking.

We have 6 layers, but added 5 more to the hen house. I have been using our eggs every day too. I may try dehydrating them this year.

You freeze your noodles? Last year I made noodles for the first time, dried them and stored them in jars. How do you freeze them, and is it better?

I sell mine for $2.50/dozen - mostly just to cover the cost of the feed, we just have 9 hens. I will look for that egg cookbook, sounds like a winner!!

My girls were laying 18 a day up until Dec, then down to a dozen.
Now with the cold I'm only getting 4-6 a day! I get $2 a dozen,
we have Khaki Campbell ducks for eggs, too.
I make pound cake - it uses 10-12 eggs up quickly! Freezes well,
if I can keep it away from the kids. Just put 40 eggs into the bator -
should have chicks by Valentine's Day! :)

Valerie,

I get $3 per dozen and $4 per 18 pack. I do not feed organic feed, but they are free-range and the eggs are delicious. They sell free-range local for 2.99/dz at our natural food store, so I'd say this is the going rate. I have several long-time customers. I keep the cost at this amount because it pays for their weekly feed :0)

I honestly don't know the exact number of hens I have now, but between the ducks and the hens I am getting 2 dozen a day. :0)

When I get too many myself from our chickens, which doesn't happen too often, I make deviled eggs. I try to use the oldest eggs as the fresh ones are hard to peel. I let them stay in the fridge at least 10 days before making boiled or deviled eggs. That gives the membranes time to separate from the shell and they peel easier. Most of the time however, my customers from my hair salon that I own buy them straight away and I don't many for myself. That is a good thing. And, I just picked up another weekly egg customer.

Here on Long Island my girls are not back to laying yet... I do not have a light in the coop, generally they start back up in mid-late February. I was just telling my husband tonight that I cant wait till they start again! Of course with the winter we're havin they may never lay! Expecting another big storm tomorrow night into Thursday...sigh

Sharing a recipe we use often over the summer when we have lots of extra eggs. We double it and the kids love it for after school snacking, it's great for breakfast or for dinner.

This is my first year with my ladies. I have 19 hens. I gather anywhere from 12 to 18 eggs aday! I keep a light on in their house. I was told that as long as they have sunlight or some kind of light they will lay. All I know is they are laying.I like the idea about the noodles. I will try that one. Thanks!

She probably meant lay-they can live for 12 or more years but will slow way down to nothing in the laying dept!

My mother in law has chickens and she went out to gather eggs and she only got 1 lol she said they are not laying cause they are cold. She also said that chickens only live about 3-4 years is that true?

I am ready for the warm weather. Bring it on. I am so tired of bein cooped up in the house!!!!

Don'tcha love having your fresh eggs! It's cold here, so my ladies give us 2-4 eggs a day if we are lucky. In the summer, the 7 hens give us 7 a day most days. Love those eggs. I make homemade angel food cake, and save the yolks for homemade noodles. Yum!

Kristin - I just bumped a post I made about the lemon curd last year - it has the link to the Tasty Kitchen website where I found the lemon curd recipe. Just click on the canning section or do a search. It is really good stuff. As it turned out I didn't have quite enough lemons to do this today, so it will be tomorrow's project.
I'm not sure what's up with the eggs - we have had lots of snow and frigid temps and are getting eggs, whereas last year we had a fairly mild winter and I didn't get any eggs. It's the ladies' second winter, maybe they are just better at laying now:) Anyway, it's nice to have them!!

Our gals (19 of them) suprised us with 11 today! & the Aracaunas have picked back up & am getting 2 HUGE blue eggs a day also.
So Fun! Hubby has a gal at work that is pregnant & wants to eat at least 2 of our eggs a day. How can you turn down a mother to be???

I am so jealous! I am down to just 2 eggs in my basket and I had to buy those. No sign of an egg around here. All that food sure sounds good though. I have been making frittatas alot too. I love them. I wish you would post a recipe for the lemon curd. I would like to make some one day. I'm glad you are over run with eggs. You'll have to share your secret. I need help!
