What are some recipes that I can use dried beans in? How do you use them? I really want to start using them instead of the canned ones.

I love this subject. Thank you Elizabeth for starting it. I'm afraid I really don't have much to contribute, but most certainly am going to glean all your knowledge if I can. I do have a little antidote that my Dad used to say when I was a little girl. He came from a farming community ( about 20 miles from MaryJane). During the depression, he had to quit school to earn money for his family as his Dad was ill. He hired out to local farmers, many of whom had come from around Germany. They ate a lot of lentils & beans. He would quote one farmer as saying in broken English...."Dey beans..dey take de place of da meat." I am bound & determined to add more of that to my husband's & my diet.

We made this soup yesterday, and it was delicious! Wanted to share because it used black beans and we used frozen garden tomatoes vs. canned. Yumm!

I bought a 4 cup carton of organic free range broth for $1.49 also and used all of it, and add more of the other items. I really need to make my own broth, but wanted to share. It was a spicy/sweet soup - yum!

I made black bean soup last week and it was delicious! Mu husband said it was a keeper recipe. I saw lots of recipes on the hillbilly housewife webiste, but I can't open it on my computer for some reason. Sigh.

Forgot to mention that I bake up dry black beans in the crock pot, cool, and freeze in containers for future meals. I typically bake them up with onion, salt and pepper.

I tried the recipe last night and it was delicious. You can utilize black beans and lots of garden goodies. You could even swap out the noodles for spaghetti squash.

I don't buy packets of dry taco mix either. I make a batch and keep it in a recycled glass jar. Yum!

Take white beans and soak over night. Rinse. Cover with water 3 inches above beans. Add 1/4 cup of Extra Virgin Olive oil; 1/2 chopped onion. 1 Tsp Thyme, 1/2 tsp sage. Salt & pepper. Cook until beans are done. Add water as needed.

I can then use the beans as a main dish. Next I will use the left over beans to make soup. Add a few cups of chicken broth. A can of chopped tomatoes,& sliced carrots. Delicious with toasted french bread. If I have some white beans still left over I will put a cup in the blender with one avocado, salt, pepper and garlic. Use as a dip

I picked up how to freeze them from 10 Dollar Dinners on the food network. Soak over night, cook until slightly softened, drain, and cool comletely. I package them in zip-top bags, 2 C. per bag and freeze. When I want beans for soup or chili, I just open a bag and dump them in.

Price wise, you can't beat it. The cheapest I can get canned beans here (without a major sale) is $.49 per can. A bag of dried pinto beans of $.89 and will make the equivalent of 3 cans. It can be labor intensive, but I've just made it part of my routine every Thursday (which is a less busy night of the week for me.) I put them on to soak after church Wednesday night, then cook and package after work Thursday.

As far as recipes go, I use kidney, pintos, or black beans in my chili. Usually add great-northern to my vegetable soup. I have been known to thaw random packages and cook for a side dish. Our favorite is Taco Soup.

1 lb. ground beef, browned with onions & garlic
1 can diced tomatoes
1 "can" black beans
1 can whole-kernel corn (I usually use left-overs from a previous meal.)
1 small can tomato sauce
1 pkg. taco seasoning mix
1 pkg. dried ranch dressing mix
Water as needed.

Brown the meat, then "dump & pour" everything else. Add enough water to get the consistency you need - no more than 1 whole tomato can. Cook until seasonings are well dissolved. Serve over chips or with them, sour cream, cheese - and I've been known to add fresh cilantro and a splash of lime juice. It's quick, easy, and almost a one pot meal.

Bake up dried black beans in a crockpot or stove top, and freeze in containers for future recipes. Here is one:

Layer these on a wholewheat, low sodium soft tortilla

Mix one avocado with 1 cup salsa, layer this first
add a layer of shredded or cubed chicken
top with black beans and enjoy.

My kids like to add greens, and fat free sour cream.

I bake up pinto beans with yellow onions in the crockpot (soak in water the night before and rinse first), and use it to make bean burritos (mash them before using them as "refried beans").

There is a black bean pasta recipe at allrecipes.com that we make and love. Use dried, by baking up ahead and freezing. Simply take them out and thaw the night before you need them.

Bake any bean up ahead and freeze to use in any dish that calls for canned beans, like Kidney in chili or navy in soups. Use dried beans to make homemade baked beans. There are tons of recipes on the Internet I believe. I think we use navy beans in ours.

I love using dried beans. I use them in place of potatoes in lots of soup recipes. I also add them to chicken broth and chicken meat and simmer in the crockpot for a yummy soup.

You can also do the "quick soak" method with a little planning. Chef's prefer this way for some reason. Put beans in pot of warm water to boil. Boil rapidly for 20 minutes then remove from heat, cover and let sit and hour to 2 hours. Then you're ready.

I use dried beans for everything. Basically, a bag of dried beans feeds 8-10 people. And some folks can even have 2nd's :)

I make bean soup in the crockpot, black eyed peas with andouille, curried lentil soups, etc...I do, however, always keep cans of beans around for chili. That's something I want to make "right now".

You can use them in any recipe that calls for canned ones, except you have to soak them overnight and cook them a little first. You can also can them yourself see the next post about canning beans.
