I have an abundance of radishes. They grow so well here on our farm, I just can't help but plant them, and lots of them. Thank goodness for MaryJane! I couldn't figure out what to do with all those radishes, and today I was rereading MaryJane's idea book. Well, it hit me, I could ferment them. However, I have never done anything like this. I am full of questions. From a quick internet search, I discover radishes are a main part of Kimchi. But I have never had Kimchi. Can anyone help me? Is there a ratio of water to sea salt? Are there some good spices that might go well with it? Do I leave them whole, chop them, or shred them? I haven't a clue, and I know that I don't have much time before the radishes go to seed.

Someone please help!!!
