I wanted to do something for the office for Wednesday, but we've been inundated with sweets, so I thought a cheese ball would be a good offering. I always make the one with chipped beef, cream cheese and green onions--would like to try something new.

What's your favorite?

Ok, girls, I made one of Aunt Jenny's, and one of Ninibini's and...it's 9:00 am and everyone has started eating them already!!!! Was hoping to have some for lunch, but I don't think they're gonna be around!

Thanks again--so yummy, and such a nice change from cookies (though I do love those, too!!)

Whew. I had to go eat lunch I was so hungry reading all these, and I'm glad I did--when I get back there are a few more yummy recipes! Aunt Jenny, I'm so glad you posted yours because I always imagine you and your kids delivering these every Christmas. Now I can have one, too!!!!

I think I'm going to make two...and yes, Ninibini, I could have easily been referring to spouses with my post :)

Gosh all those sound so good! We have given cheeseballs as "neighbor gifts" (a big thing around here) for many years and this is the recipe we use. Always a big hit.

Neighbor gift Cheeseballs

1- 8 oz pkg cream cheese (softened)
1 cup grated cheddar cheese
1 cup grated jack cheese
1 can diced ortega chiles
1/2 small can chopped black olives
1/2 a small red onion..minced
mix up in a large bowl with your hands and roll into 2 balls. You can roll them in nuts, but we never do. WE make at least 25 of these each Christmas week so I can tell you that you can multiply this recipe with great results. You can sub grated colby jack cheese (2 cups) for the 1 cup each of cheddar and jack cheese as well. We give each ball with a strip (or two depending on the size of family) of ritz crackers.

LOL! When I read the title of your post, Jonni, I chuckled. All I could think of was that I have a couple of corn balls here I'd like to share (meaning DH & DS) - LOL!!!

Here is a cheeseball recipe I created with my son when he was little. 'Hope this helps! :)

Cheeseball a la Mommy & Sam

8 oz. package cream cheese
4 oz. grated sharp cheddar cheese
1 T softened butter
1 T minced onion
1 clove minced garlic
1 tsp Dijon or honey Dijon mustard
Black pepper to taste
Chopped nuts OR sliced almonds (see below)

Mix ingredients well. Shape into a ball or pinecone shape. Tightly wrap in plastic wrap and chill for 1 hour.

When chilled, if you are making a cheese ball, roll in chopped nuts.

If you are doing a pinecone shape, starting at the point, gently place sliced almonds all over going in one direction, one row at a time, making sure they stick out a little, so that when you’re done it looks like a pine cone. (My Brilliant Mother used to do that with her cheese balls when we were little and I have always loved it. She used sprigs of dill as "pine needles.")

Serve with wheat crackers or any other of your favorite crackers!

We've also melted any cheeseball leftovers on top of steamed broccoli for a fancy side dish - it's pretty "fancy," my once little boy used to say! :)

Merry Christmas! - Nini

Well, all these sound so good and now i'm just plain hungry!!!

I could make a meal out of cheeseballs, so I know what you mean about moving away from the table!!!

Great ideas, girls. And easy, too. Just what I need this time of year!

We do two for Thanksgiving every year that are cream cheese based - one is with smoked gouda, the other blue cheese. If you want the recipe for either of those let me know and I'll post it. I'm getting so I prefer cheese to sweets myself:)

A friend made one that was cream cheese, shredded cheese, finely chopped ham and green chilies. Can't remember what she rolled it in but boy oh boy, was it yummy!! I had to move away from the food table because it was so yummy!!

Good luck and I prefer these kinds of treats over the sweet kind any day!! :)

Oh, and another one we do is to take two pkgs cream cheese and add a package of Taco Bell Taco seasoning. Mix that until the season is totally incorporated and then roll in chopped pecans.

I love to take Louis Kemp crab, chop it up in little pieces and then mix that in with the cream cheese so that it is about 1/2 crab 1/2 cream cheese and a little garlic powder and form it in a ball. Then I pour cocktail sauce over it so that it kind of drips down like fingers holding the cheese ball and serve with ritz crackers. Yum.
