I roasted our chicken backwards. The poor girl had a crispy, spicy rear and bland, soggy boobs! I feel like I did her a terrble injustice LOL!

The breast was definitely juicey!! No complaints from the family.

My neighbor cooks her chicken breast side done for the first half of cooking then flips it
over so the skin browns and crips. I think she might be on to something!

I was gonna try that next time. I read a recipe recently that said stuff some flavor stuff in the cavity-onion, herbs etc, pull back the skin on the breast and slid some herbs under it and roast it breast down for more flavorful, moist, tender breasts..sounded like it was worth a try to me.
