My neighbor cooks her chicken breast side done for the first half of cooking then flips it over so the skin browns and crips. I think she might be on to something! I read a recipe recently that said stuff some flavor stuff in the cavity-onion, herbs etc, pull back the skin on the breast and slid some herbs under it and roast it breast down for more flavorful, moist, tender breasts..sounded like it was worth a try to me.
