Thanks for the info and advice. Now I'm thinking - can I can lobster? Yum. I'll check with our extension office. Can have lobster shipped back from Rhode Island overnight.

My MIL and I went to a u-pick strawberry farm last week. I made a bunch of ice cream and then froze the rest for shortcakes this winter. YUM! I love strawberry time!

Tammy and Theresa, I was going to say the same thing about having your pressure canner checked. I also found one at an estate sale for a good deal (yours was the deal of the century though!) and need to have it checked. There are websites online where you can buy replacement gaskets too.

I found this GREAT website. It's great to fill in the gaps for finding those things we might not grow at home or for those who haven't the space for a really BIG garden. http://www.pickyourown.org/index.htm

[edit] Oh, and I'm hoping to get to the strawberry u-pick very soon to make jam and also to freeze some of the berries to pull out in the winter. I'd love to not have to buy a lot of produce this winter since it has to be shipped so far and I've heard that foods lose a lot of nutrition after they've been picked by the time they reach the stores.

Hi Debbie,
Canning meat is wonderful!!! The freshness of the fish can't be beat. We usually buy the fish from the boat and take it home to be canned, but last year we had so much we had to freeze it and thaw it as we canned. It took a couple weeks, between work and responsibilities.

If you start canning meat, I would call the local extension office, they will tell you this years standard for heat temp and time. I have heard this changes often, they continue to increase the temp and time for safety.

Before you use a used canner I think you're suppose to get it tested. I think they test to make sure the seal is tight and the gauge works well. I hope I am giving you good info, but I remember looking this up last year and I think the extension office will test it, or tell you how to test it.

What recipe do you use with your tuna? And did you cook yours first. We tried a few different recipes last year all uncooked. My favorites were Spring water (with a little salt to keep it from getting rubbery), Spring water, salt and a drop of sesame oil (great on Asian salads), but my favorite recipe is olive oil, dash of salt, fresh minced garlic, and a fresh sprig of rosemary. This is so good and I want to try using the canned tuna oil as a base for Caesar salad dressing.

I thought I would give canning a try for the first time. I found a pressure canner at a garage sale for $5. Hopefully it works. All the peices were together and it looked pretty clean. Anyway, Any advice for the first timer, I probably will make homemade salsa. Then I hope to can peaches from our tree. Maybe even apples. I am super excited.

bluesky, have you tried roasting the peppers and then freezing them?

I've been picking up canning jars/lids at garage sales lately. I'm hoping to get some zuc's from my sil to can and I'm still waiting to see if my 5 tomato plants are going to produce. They've had some buds but we've been over 100' off and on for the past month and I've heard that the buds fall off when it's really hot. The plants are doing well so we'll see.
I haven't canned in almost thirty years so it's going to be interesting.

I am stewing and canning tomatoes. And this past week-end I put up blueberries in the freezer. We went to a u-pick farm, since our blueberry bushes do not seem to want to give us anything! We had a lot of fun picking and my husband was on a mission. We hope to go again this week-end. My tomatoes are all peaking now, and I have 6 pints done, and stopped because I ran out of jars. Have morejars now, so have to get back to it before they get over-ripe!

I have tried canning peppers in the past. They do okay if you use them in a casserole or something where they do not need to be crisp. I have tried freezing them, too, but maybe the salsa idea would be good for preserving peppers?

I just finished a dozen jars of strawberry jam tonight. It looks so pretty cooling on the kitchen counter. So rewarding.
Our strawberries have been going WILD this year! We pick about a gallon a day from our tiny patch! The weather has been very cool, I'm thinking that must be it. More to pick tomorrow...I'm thinking I may bake some stawberry bread to freeze. The kids are actually getting tired of fresh strawberries-can you imagine?!

I canned tuna for the first time last year and I'll sure do it again this year. Initially it was expensive to buy the fish off the boat, but when all was said and done it ended up being cheaper than storebought and far surpassed it in quality.
I will also do pickled beets and salsa, salsa. I think we were all out of homemade salsa by the end of September once the girls discovered it! Also lots and lots of jams. They sold really well and we ran out of most varieties for ourselves.

I spent the past two days canning pickled beets. I got 23 pints. I would have gotten it done faster, but my 5 month old had other ideas. Can't wait for the tomatoes! I still need to take my pressure canner in to be checked out. It's new to me but has lived a very long life in my aunt's basement.

How cool that you can your own tuna and salmon. I'm impressed. I do have recipes for canning these things and chicken, stew, etc. Maybe I'll try this year. I did buy a new canner last year and I love it. It's huge and I can still use my old one too.

I love to can too, it's wonderful opening a can of my tuna in the middle of winter. I will be canning tomatoes, beans, lots of jams and jellies, salsa and hopefully tuna and salmon again this year. I am hoping to get a new pressure cooker this month. Last year I canned with my mom and used hers, but we both do so much that I would rather work in my kitchen as time allows.

When I feel spring coming I have to plant or I’ll go crazy!

Like Jenny, I won't be canning til July, but then watch out! I want to have much more done than last year. I love canning too. So productive and I really feel like a farmgirl when I'm elbow deep in green beans or other fruit and veggies.

I have to invest in a larger canner~~Planning on doing green beans again this year.and might try something else-
Jenny-is the recipe for salsa with the canner recipes?

Oh I will be...I lots of canning..most of it dosn't start until late july though here...and August and early /Sept is when I am frantically doing tomatoes...salsa salsa salsa!!! Peaches in August, pickles too, and I do apricots if I get some and hopefully green beans and limas this year. I try to do some corn, carrots and mixed veggies too..and applesauce in Sept..and apple juice. I love to can things!!!
