Posted - Jun 19 2006 : 7:28:54 PM You might try cooking the cherries with onions or some other type of veggie and serving it with beef, chicken or pork as a relish for something different. Or maybe smear some type of spreadable cheese (cream or goat) on a good bread, top with the cherries and bake until cheese melted. Experiment. I love experimenting with food.

Posted - Jun 16 2006 : 3:19:38 PM I was actually interested in making bread pudding that day, and I was wondering if it was possible to make a bread pudding with them. I ended up finding a recipe online, which not only used the type of bread I had laying around (stale French bread), but it also didn't call for heavy cream or tons of butter, which is a good thing. I threw in half a bag of chocolate chips, but my husband says he thinks it would have been better without.
I didn't like it much. I guess I'm just not much of a bread pudding person. My husband thought it was great, though, and we made stale bread go away, which is always a good thing.
Cherry French Bread Pudding
2 cups low fat milk 2 tablespoons butter or margarine 3 eggs 1/3 cup sugar 1 teaspoon cornstarch 1 1/2 teaspoon vanilla 1/4 teaspoon salt 4 cups day-old French bread, cut in 3/4" cubes 3 cups fresh, sweet cherries, pitted Cinnamon Sugar (recipe follows) 1cup low fat vanilla yogurt (optional)
Heat milk and butter but do not boil; remove from heat and set aside. Beat eggs, sugar, cornstarch, vanilla, and salt together. Gradually stir milk into egg mixture; pour over bread cubes and let stand 30 minutes.
Spread cherries over the bottom of buttered 9"square pan. Pour bread mixture over cherries. Sprinkle with Cinnamon Sugar. Bake at 350F., for 30 to 40 minutes or until tester inserted near center comes out clean. Cool slightly.
Serve with yogurt, if desired. Makes eight servings.
Cinnamon Sugar: Mix 2 teaspoons sugar with a generous dash of ground cinnamon. Makes 2 teaspoons. Northwest Cherry Growers
