Thanx to Sandra, aka Sam I Am...
I processed my first pumpkin and then made a crustless pumpkin pie..
It was almost like a Mousse in texture, and much lighter than the dark orange colored store bought pie or made from a canned pumpkin...
It was easy peasy too!....check out Sandra K Licher's blog & scroll down to her 'how to make pumpkin thread'...so glad I did...
Thank you Sandy,, oh & I made 2 pies, the hub's & I nearly finished off the smaller pie...

FYI 1 med/lrg pumpkin makes aprox 10cups of processed pumpkin...enough to make several pies, & muffins & cookies...

I have heard those crustless pies are good! Thanks for sharing...and for those of us who have to limit carbs..(diabetic) it HAS to be better for us without the crust right?
