Posted - Nov 24 2010 : 7:56:47 PM WooooHoooo! Thanx to Sandra, aka Sam I Am... I processed my first pumpkin and then made a crustless pumpkin pie.. It was almost like a Mousse in texture, and much lighter than the dark orange colored store bought pie or made from a canned pumpkin... It was easy peasy too!....check out Sandra K Licher's blog & scroll down to her 'how to make pumpkin thread'...so glad I did... Thank you Sandy,, oh & I made 2 pies, the hub's & I nearly finished off the smaller pie...
FYI 1 med/lrg pumpkin makes aprox 10cups of processed pumpkin...enough to make several pies, & muffins & cookies... Happy Turkey day to you all.

Posted - Nov 24 2010 : 8:04:04 PM I have heard those crustless pies are good! Thanks for sharing...and for those of us who have to limit carbs..(diabetic) it HAS to be better for us without the crust right?
Love Each Other
