About 5 times a year, I run across a recipe in a magazine or something for waffles. Like this month's Yankee magazine for Gingerbread waffles, and I think, "I should get a waffle maker."

Should I get a waffle maker? I keep hoping to run across one in the thrift, but haven't had any luck.

What say you?

Oh Nini! Please don't take my story as gospel! I think it was a bit of humor that was interjected into the Joy of Cooking because they got bored! :-) I make different batters as well for my waffles. My waffle batter has more eggs in it than my pancake batter.

Oh my gosh! I had no idea that's where they came from, Mary Beth! How cool! And Amanda - I never knew the recipe was interchangeable! I make completely different recipes for both! WOW! I'll try it your way next time!!! (BTW - I was born in Pawtucket - Pawtucket Memorial Hospital! And I miss Apex, Newport Creamery and Red's Seafood!!! Amanda, just to prove your point - you DO know where waffles came from, right? It seems that back in the Middle Ages, some knight came home from rummaging and pillaging and his wifey had made a boatload of his favorite pancakes. She set the plate of pancakes on a low stool to get them out of the way and the knight, fully clad in his armor, accidently sat down on the pancakes since he couldn't look down and see that they were in the way. The rivets in the armor across his butt left indentions in the pancakes. So as not to upset the wifey, he decided to eat them anyway and was pleased to find that the butter stayed in the indentions rather than sliding off the way it did on the flat surface of a normal pancake. From then on, he sat on the pancakes to make indentions and the rest is history. See? You're smarter than you thought.

My mother always used to tell us that. I think she stole if from the Joy of Cooking! :-)

Okay, party pooper signing in. I find that waffle and pancake recipes are pretty much interchangeable, and you can use waffle batter for pancakes any time. If you find a waffle recipe you love, just make it as a pancake.

I'm with Julie, I like the thinner ones too. I finally found a "regular" waffle iron a couple of years ago at Sears. It's a Cuisinart and it works really well. I had one of the $10 cheapie ones but it heated unevenly. I LOVE waffles and can't wait to try the gingerbread ones! Thanks for the recipe!!

I love waffles but realized that we especially like the thinner ones 'cause we freeze them and pop them in the toaster.... i was only finding belgian type in the stores so was uber excited to find a Sears 1970's model (AND it was GREEN : ) in perfect shape at the thrift : ) It has the removable plates and i think it gets hotter than modern models ( I always use with the utmost caution and supervision) Last weeks pumpkin waffles were lovely. If you are looking at the thrift, i would check extra carefully the cord (and i avoid the old "cloth" covered cords) for safety.

Another great thing about waffles is that they freeze so well. When you do make up a batch, double it and freeze the rest. You can easily warm them up in the toaster for just one or two at a time, great for quick hot breakfasts on the run. A smear of peanut butter and it's a great sub for more fattening on the run crap. I love flavoring up my waffles, but plainer types do double duty as dinner fare. Any sauce and topping and you have a great quick meal after a long hard day at work.

Queen of Waffledom indeed! That old iron was a work of art and getting it workable was a feat in itself!!

Nini, I'm sorry that I stuck that in your head. You ARE going to mess up, you know. But not to worry, it wasn't until I was in high school that I found out that the lyrics that I had been belting out since childhood every Easter were not, "He arose. He arose, with a mighty vict'ry ore his toes!" :-)

Oh my gosh! You two crack me up! LOVE the "Waffle" lyrics, MaryBeth - I was howling! But now you've ruined me! I just know I'm going to fudge it come time for Christmas carols! LOL! And Sam - I love your blog, too! 'Just discovered MaryBeth's the other day... both are now on my favorites list! :) That waffle iron - wow! I love that! And I really loved your story - it was kind of like reading about Goldilocks and the porridge! LOL! It sounds like you had such a good time, though; a fun adventure! I think your son's recommendation of buttering the iron is brilliant - I will have to try that next time for sure! Please thank him for me! 'Waffling'. I LOVE it! :) I have a cheap-o ten dollar job that I use. If the waffles start sticking, I just put some butter on the plates. Yum! I love my waffle maker and my sandwich maker, which you can make anything in!!!

Sandra, I just read your blog and giggled to myself. Oh yes. We should "waffle" together!! :-) I'm glad that you had a rewarding experience. If I had not been making waffles for years, I think that my experience that I wrote about would have ended my waffling career forever!! And no, that was no coincidence! Great minds think alike don't you know? And so we sing:

oh Wow! I too love waffles. I like mine crispy and let the butter/maple syrup soften them as I eat. But today I tried a new recipe and I LOVE IT! French toast waffles! If you haven't heard or tasted this you have got to try it. Take your bread, dip it in your favorite french toast egg mixture then plop onto the waffle iron. Cook. So good! The little squares on the french bread waffle are wonderful little pockets for your toppings. New Fav!

I got one for a wedding rpesent 23 years ago. I have only made waffles once. On the other side of the waffle plate however is a pizzelle plate and I use that one all the time!

My Hubby got me a waffle iron for my birthday and we use it all the time! We make them for breakfast on weekends and for dinner during the week. I've developed a waffle I call 'Donut waffels' which are liberally spiced with nutmeg and vanilla. They smell heavenly! I think Meggy2's cream syrup would be wonderful on top! YUMMMMMM

Waffles are yummy,but I have to eat them with my mom's cream syrup recipe. Brown 1 cup sugar in a heavy pan. add 1 c heavy whipping cream. simmer till sugar is melted. watch that it doesnt boil over, but wow is it good!

Wow, thanks so much for all the positive responses! I'm definitely going to get one this weekend!

Here is the recipe for the gingerbread waffles. The only thing I would leave out is the cardamom...too expensive, and not enough use for it.
Gingerbread Waffles:
Makes 10

* 2 cups all-purpose flour
* 1/4 cup granulated sugar
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 1 1/2 teaspoons ground cinnamon
* 1 teaspoon ground ginger
* 1/2 teaspoon ground cardamom
* 1/4 teaspoon ground cloves
* 4 large eggs
* 6 tablespoons unsalted butter, melted and cooled
* 1 cup whole milk
* 1/2 cup sour cream, plus more for serving
* 3 tablespoons unsulfured molasses
* Lingonberry preserves (or other berry preserves), for serving

Directions

1. Whisk together flour, sugar, baking powder, baking soda, salt, and spices in a large bowl. Whisk together eggs, butter, milk, sour cream, and molasses in a medium bowl. Add egg mixture to flour mixture, and whisk until smooth.
2. Heat a waffle iron. Spoon 1/3 cup batter into each mold, and cook until golden brown. Serve warm waffles with sour cream and preserves.
