Posted - Nov 10 2010 : 5:20:44 PMI have always canned pumpkin butter but misplaced my recipe. When I was looking on line, it was advised to never can pumpkin butter due to the low acidity. And the few canning recipes I did find said to put them inthe water bath from 10 minutes up to two hours. I have always canned the butter for 20 minutes, and never with any problems. Any advice or suggestions? Thank you, Carol

Posted - Nov 11 2010 : 05:34:56 AMYou are right! Pumpkin butter can be frozen or refrigerated but not canned in a water bath. I'm glad you have been lucky so far with having no problems but it isn't safe. You can preserve cubed pumpkin (but not in a water bath).
