Yesterday I canned banana peppers (pickled), today was salsa, and tomorrow is jelly. Anyone else been canning like crazy?

I have a lot of produce that I froze last year that has to be dealt with, so that's why today I made salsa. It tastes GREAT. I got the recipe out of the BHG 'You Can Can' book; it's the Chunky Salsa recipe. I also added some lime juice, too. Anyway, so tomorrow looks like muscadine, blackberry, and blueberry jelly day!

Sandra, I haven't done pumpkin for a very long time. I do not like pumpkin pie and so my poor husband only gets it at Thanksgiving and I like Zuchinni bread better than pumpkin bread. I know. I know. It's all about me!! :-)

MsDoolittle, and Kraut crazy you say? It just means that we have a little vinegar in us!!! :-)

I just started cooking my pumpkins today and that will get frozen in cubes. After I get that all done then maybe I'll make some pumpkin butter. That sauerkraut looks SO GOOD! I've tasted homemade sauerkraut done the "crock" way by an old Czech lady in the town I used to live in. Nothing compares to it! YUMMO!

Melody, thanks for sharing that because my endocrinologist is having a cow that the naturopath has me on Armour Thyro and not the synthetic. I figure, why mess with what works?? Plus, the endocrinologist had me on 4 times the amount that I am on now and it was my other doctor's turn to have a cow. She said that I could have gone into cardiac arrest. She started me low and each month increases a little more. We got too high last month and so I have backed off a little. I so appreciate her approach and don't think I'll be going back to the specialist!!

Mary Beth...I was on the synthetic thyroid meds for about a year-and it did NOT do a dang thing. So I made it a point to ask for Armour Thyroid then Dr. kept adjusting the dosage when after many, many months of going in every time I needed a refill and we were right back to where we started from I told her enough! Now I am on the dosage I think works best for me and now I feel energy like I have haven't felt in over 25 years. It's an incredible feeling when a woman takes charge of her own health with informed decisions-Maybe I just had to reach this age to finally become vocal about issues concerning me, myself and I--Whew...sorry for the rant!

Oh...I picked up some sauerkraut this evening-Guess what we are having while DH is up at deer camp? LOL!

Melody, I am too! Was just diagnosed with Hoshimoto's Disease and the endocinologist wanted me to take the synthetic, but my regular doctor put me on Armour Thyro. I feel like a new person!

I didn't know that Mary Beth... I'm hypothyroid and on Armour Thyroid-have been for a while-Gee...I'd much rather take sauerkraut twice a day! After our show tomorrow I am headed for the grocery store for a pork butt and some kraut :0

Well, dinner is over and the dishwasher is going, but there ARE leftovers!

Did you know that sauerkraut is especially good for people with thyroid problems? I just found that out.

Oh, I'm sure I'll calm down when the new wears off. I have to say that the pork roast and fresh kraut were awesome!!! Accompanied by hominy and green beans. Patting my tummy now.

Marcia - I bet we're giving off funny little noises here too! Hot dogs with kraut last night and right now a pork roast is baking nestled in a bed of kraut. Thinking I might make Ruebens tomorrow. Am I overdoing my excitement? :-)

Just a note, it isn't safe to home can pumpkin pie filling. It is low acid and too viscous to be certain that botulism spores have been killed. You can preserve cubed pumpkin but if you want to do filling it needs to be frozen or refrigerated.

Amanda, I think that you are allowed to not like kraut! :-) I can't stand canned peas so I guess we all have our little idiosyncracies!! Our tornado shelter is wonderful. We have only had it through 4 seasons now and I love the fact that we can go underground now. And it's big enough for 8 people easily so there is plenty of room for other things besides people.

Melody, thank you for verifying that I'm not crazy. So many things in my home were my grandparents' and even my great-grandparents' as well as items from my husband's family. It is like we've been handed a window to those who came before us. It's pretty neat.

I have a very old brown bowl that was given to me early on in our marriage by my mother-in-law that used to belong to my husbands grandmother and for the life of me I feel a "kinship" with that bowl-LOL! It is so nice to know someone else out there feels that way about wonderful old crocks and beat up old stoneware bowls; it must be the history of "family" behind those simple objects that tugs at our hearts.

Your grandmother would be very pleased...

Mary Beth, I have to admit....I can't stand kraut. I mean, I thought that I SHOULD like it since my great grandparents were German and Austrian...but, no. I did try it though! But it looks good! Lol.

That is a neat story. I think of my Mamaw every time I make her cornbread. :0)

I am just dying to bury a storage container in our hill and make it into a tornado shelter/canned goods pantry. That is so awesome.

Melody, what is wrong with him?? :-) He must have decided that your ol' kraut breath wasn't so bad after all!

It is pretty cool to feel the kinship with my grandmother who died when I was in college. She made sauerkraut in these crocks and my father and aunt still talk about it and they are in their 80's. It makes me feel very close to her time in life. However, I doubt seriously that hers fermented in the tornado shelter! It was perfect down there because it stays a pretty constant temp of 50-60 degrees in the Fall.

Wonderful picture and it looks YUMMY! Can't have sauerkraut in my house-Short story----Early on when my DH and I were dating we attended an old fashioned auction where a concession van was selling hotdogs. I asked for saurkraut on my hot dog. I took a bite looked at my husband to be and he promptly said to me..."I will never kiss you again!" I thought how can I actually date someone who doesn't like saurkraut?? Even though he is not a fan we have been married almost 20-years now-LOL!

Gosh... that looks delicious!

Amanda, I am so excited! Am canning tonight. I decided to try my hand at making sauerkraut in my grandmother's old crocks. I have to admit that it was a little scary at first because you don't want to kill anybody or anything! Well, here it is 4 wks later and I brought up the first crock out of the storm cellar where they are residing. We had fresh kraut with carroway seeds on hot dogs tonight. OH MYYY!! Awesome. I put a couple of baggies of kraut in the frig and am canning the rest as I type. I am going to let the other crock sit for one more week to see if it makes it any more strong. This was very mild and pleasant. My husband likes it really potent though. Anyway, canning tonight!!

I have another box of apples to do. I already did quite a bit of applesauce, so I am thinking pie filling or maybe some kind of spiced apple chunks. The main fruit and vege season is basically over. Now I will be making extra large batches of soup, chili, and other "meal type things" to do on a not so regular basis. I am definitely a canning addict!

Well, today so far (it's 11am) I have done a batch of blueberry and blackberry jelly. I am thawing raspberry juice, so that will be this afternoon. Tonight looks like grape juicing time (the grapes are all frozen), and tomorrow is looking like muscadine jelly day. Glad to see that a lot of gals are out there canning, too! :0)
