Posted - Nov 06 2010 : 2:51:02 PM My favorite Italian sausage-lentil soup. Ingredients ~ 1/2 c. chopped onions 2 tbsp. butter 8 1/2 c. water or beef broth 1 lb. dry lentil, rinsed and picked over for debris 1 lb. Italian sausage, cut in bite size pieces 3/4 tsp. salt Garlic, minced or powdered to taste 10 oz. pkg. chopped spinach, frozen and thawed * I use fresh baby spinach , I just cut it up into strips all the time if I don't have frozen I can of diced tomatoes 1 tbsp. lemon juice or to taste * sometimes I throw a dash of balsamic vinegar in just to make it different =)
Directions ~ Sauté onions in hot butter until lightly browned. Add water, lentils, sausage, garlic and salt to a large heavy pan or Dutch oven and bring to a boil. Skim off foam that rises to surface every few minutes.
Cover and simmer 40 minutes or until lentils are tender or starting to burst and are not grainy to the taste. Stir in spinach; cover and continue cooking for 10 minutes. Add lemon juice and tomatoes and correct seasoning if necessary. Add a good grind of black pepper. Serve with a good artisan style bread and a salad for a truly hearty meal Any leftovers can be frozen and the soup is yummy the second day!

Posted - Nov 16 2010 : 5:09:46 PM Annika this recipes appears to have the same ingredients that I make in a vegetarian version. Adding some small halved red potatoes would be delicious in this recipe. Love to eat soup, it's just being by yourself you feel like your eating it forever! I get to share with my friends! Wish ya'll were closer!

Posted - Nov 16 2010 : 09:55:30 AM Melody, lentils are a dried flat bean like vegetable, I don't soak mine per say, but I do rinse them well in a sieve. I don't think soaking them over night would hurt them, but they are small so I just cook them until done. Hope this helps a bit and I hope that you like it!

...Just one question though, I don't know anything about lentils are they a dry bean and do you have to soak these overnight before you make the soup?
