I have already given away all I can.
Please tell me if I can store it somehow? Would I grate it first and then freeze it?

OR any other things besides desert like Zucchini bread that we can use it in........thanks!

Posted - Nov 02 2010 : 11:28:55 AM I dehydrated quite a bit this year and froze the rest for winter zuchinni bread! A huge zuchinni will dry down to fit in a quart jar!
Use some the other day by crunching it up into some soup... Familly loved the soup and DH, who doesn't like it, never even noticed it in the soup!

I think I will do both, freeze some grated and make some cupcakes to freeze too. I also love the size of the mini loaves too. Darling little nibbles to give away.

Posted - Nov 02 2010 : 07:05:46 AM Yes, you can freeze it - just grate what you would use in your recipe, seal it in a ziploc bag & place in your freezer. You can also chop it up for soup recipes and freeze those portions for use later. Make up a batch of ratatouille and freeze it for later.
You could also make zucchini cupcakes and freeze the cupcakes for later.... or make smaller loaves and freeze them after they cool. When you take your breads out of the freezer, let them defrost in the bag. Don't open the bags or they could dry out (it won't get soggy at all).
I've never canned zucchini (I usually freeze them) but you could do that, too ... either plain or pickled. Hope this helps!
