when i make mozzarella from belles cow milk it dries out in fridge. does antone have ideas how to keep it moist and fresh? thanks sherrye

i want a slice of pizza too.lol i spoke to a guy who went to italy. ha said they store it in olive oil. i think i will try thet too. thanks sherrye

I put fresh mozzarella in a container filled with water. It keeps it nice and moist for me.

I always just wrap each ball (I shape it into baseball size wads) in plastic wrap or put them into airtight containers. But we do usually eat it up pretty fast! I did see fresh mozz stored in whey in a jar, at Whole Foods, but mine does get gooey when I do that at home. I usually have to store mine on top of homemade pizza, to make everyone around here happy!!!

hi merry, thanks for input. when i put it in whey the outside gets gooey. is that just how it is going to be. i dont think wax works since we eat it in a week. i hate plastic. i tried a glass jar still gets hard on outside. thanks sherrye

Fresh mozzarella needs to be eaten within a week also, otherwise, it dries out :(

If its fresh made by you, either wrap it tightly and put in a airtight container, or store it in the whey in a container in the fridge.
