Posted - Oct 18 2010 : 09:12:37 AM This summer I froze lots of pie filling as part of my winter goal of making a 100% homemade pie. Usually I buy premade crusts but I'd rather make my own.
Last night I tried my rolling out my first crust and it was horribly tragic. Yes, I used a mix but baby steps I suppose. Both crusts ( 2 crust pie) had the same issues. The bigger the "circle" got, the more the edges would crack and tear.
I ended up with two crusts that looked like triangles with very ragged sides. Plus I could only get each one around 7 inches.

I am a pie crust flunky myself. I struggled with them for a long time but the recipe that is in the latest (fall) issue of the MJF Magazine is not only easy- it's delicious! I canned a lot of apple pie filling from our tree out back using the MaryJanes's recipe from a past magazine and now I have a wonderful MaryJane's pie crust to go with it! Really you should try it! Yum!

Posted - Oct 19 2010 : 2:11:51 PM The pie crust recipe from Nourishing Traditions is THE BEST pie crust I have ever had plus it is SOOOOOOOOOOO easy to work! I have NEVER had it rip or crack once and you can pick it up after it's rolled out, hold it in the air and nothing happens!! I can't rave about it enough!

Makes two 9-inch crusts 2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling 1 teaspoon salt 1 teaspoon sugar 1 cup (2 sticks) cold unsalted butter, cut into pieces Directions 1.In a food processor, combine flour, salt, and sugar; pulse to combine. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. 2.Sprinkle with 1/4 cup ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to cup more ice water, 1 tablespoon at a time). Do not overmix. 3.Transfer half of dough (still crumbly) onto a piece of plastic wrap. Form dough into a disk 3/4 inch thick; wrap tightly in plastic. Refrigerate until firm, at least 1 hour (and up to 3 days). Repeat with remaining dough. 4.Place one disk of dough on a lightly floured piece of waxed paper. Rolling from center outward, form into a 14-inch round. Using paper, lift and wrap dough around a floured rolling pin; carefully unroll (discarding paper) over a 9-inch pie plate. 5.Gently fit dough into bottom and sides of plate. Avoid stretching or tearing dough. Using kitchen shears, trim overhang to 1 inch; fold under to form a rim. Crimp with fingertips and knuckle. Repeat with remaining disk of dough.

I'll also be on the lookout for Baking with Julia. I'm a huge Julia Child fan so I know she won't disappoint.

Posted - Oct 18 2010 : 09:45:12 AM A few years ago, I was reading through a copy of the book "Baking with Julia" by Julia Child. She had a great turtorial in there about pie crust, and after following it, I've has pie dough success ever since. I would see if your local library has the book if you are interested.
