 Pie crust fail!

This summer I froze lots of pie filling as part of my winter goal of making a 100% homemade pie. Usually I buy premade crusts but I'd rather make my own.

Last night I tried my rolling out my first crust and it was horribly tragic. Yes, I used a mix but baby steps I suppose. Both crusts ( 2 crust pie) had the same issues. The bigger the "circle" got, the more the edges would crack and tear.

I ended up with two crusts that looked like triangles with very ragged sides. Plus I could only get each one around 7 inches.

Help!

This weekend is DS's milk and cookie birthday party. Once it's over I'll be embarking on what I'm called The Great Pie Adventure!!!

Hey Heather, don't leave us hanging like that, lol!! Ya gotta give us the recipe! Alee I was looking at tthat pie crust recipe in MJF magazine too. I will give that a try too.

Hi ladies!

I am a pie crust flunky myself. I struggled with them for a long time but the recipe that is in the latest (fall) issue of the MJF Magazine is not only easy- it's delicious! I canned a lot of apple pie filling from our tree out back using the MaryJanes's recipe from a past magazine and now I have a wonderful MaryJane's pie crust to go with it! Really you should try it! Yum!

The pie crust recipe from Nourishing Traditions is THE BEST pie crust I have ever had plus it is SOOOOOOOOOOO easy to work! I have NEVER had it rip or crack once and you can pick it up after it's rolled out, hold it in the air and nothing happens!! I can't rave about it enough!

Martha Stewart Pate' Brise is great too.
Makes two 9-inch crusts
2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) cold unsalted butter, cut into pieces
Directions
1.In a food processor, combine flour, salt, and sugar; pulse to combine. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining.
2.Sprinkle with 1/4 cup ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to cup more ice water, 1 tablespoon at a time). Do not overmix.
3.Transfer half of dough (still crumbly) onto a piece of plastic wrap. Form dough into a disk 3/4 inch thick; wrap tightly in plastic. Refrigerate until firm, at least 1 hour (and up to 3 days). Repeat with remaining dough.
4.Place one disk of dough on a lightly floured piece of waxed paper. Rolling from center outward, form into a 14-inch round. Using paper, lift and wrap dough around a floured rolling pin; carefully unroll (discarding paper) over a 9-inch pie plate.
5.Gently fit dough into bottom and sides of plate. Avoid stretching or tearing dough. Using kitchen shears, trim overhang to 1 inch; fold under to form a rim. Crimp with fingertips and knuckle. Repeat with remaining disk of dough.

Thanks for the recipe! I've written it on a note card and have added it to my recipe box! I'll give it a shot this weekend.

I'll also be on the lookout for Baking with Julia. I'm a huge Julia Child fan so I know she won't disappoint.

A few years ago, I was reading through a copy of the book "Baking with Julia" by Julia Child. She had a great turtorial in there about pie crust, and after following it, I've has pie dough success ever since. I would see if your local library has the book if you are interested.

roll out betweeen sheets of floured wax paper
