I have made mozzarella, ricotta. what recipe do you use for making cheddar?? I have Ricki Carrol's book, thinking I may try hers. But was wondering what you use?

I use Ricki's book. I make mostly colby. I either press it or leave it as curds. I have made the cheddar recipe, and the caraway gouda. Both turn out well, but I have issues with trying to age. I have had success ageing for 3 months. But after that it seems to mold under the wax, or the wax cracks.
We are spoiled, and don;t care for boughten cheese anymore. No flavor.

I wish I could help you...I have Ricki's kit sitting on my counter but have yet to use it! Waiting for weather to get bad so I am forced to stay inside! LOL! Hopefully, that will be awhile as I still have lots to do outside before winter. Now I know who to go to though if I have questions or problems! I will subscribe to this post for sure. Good luck...sounds like you are already an expert! That's awesome!
