Posted - Oct 11 2010 : 1:18:15 PM I hope this isn't a silly question. I've never used fresh pumpkin other than decorating and roasting the seeds, how do you know when a pumpkin is "ripe" or ready for cooking? |

Posted - Oct 10 2010 : 2:10:01 PM My apologies if what is offered on the websites is a repeat of this, but I did three pumpkins yesterday. I just wash them up, cut them into big pieces, trim off the inside pith/seeds and bake on a cookie sheet. Just watch them, as the water that comes out can overflow the cookie sheet (you should see my nice cleaned oven today...sheesh!). Anyway, when they are done, I scrape the cooked pulp from the rind into a cheesecloth-lined strainer and let the water drain off...you will be surprised at how much water comes out of it. I then puree and use just like you would canned. I usually freeze in 2 cup bags, it freezes like a dream. I even bake it into yeast breads...just substitute pumpkin puree for half of the liquid in your recipe. Ta dah!! Di

Posted - Oct 07 2010 : 08:45:45 AM I usually cut it in half-scoop out the seeds-then I microwave it til soft-3-4 minutes at a time so it does not burn-then I scoop out the pulp & mix with a mixer or you could run it through a food processer-this gives you fresh pumpkin pulp with no spices, preservatives, sugar etc. I hope this helps.
