Help!! I have tomatillos coming out my ears! Who knew that two plants could produce such an abundance!?!
Any suggestions on ways to preserve them? Freeze?? I have made fresh salsa with them (awesome!), but after that I'm at a loss.

You can also leave them in the husk and put them in a bag in the back of your fridge. They will keep until you need them or can work them up. I made a salsa with them. yummy.

Here is a GREAT recipe using tomatillos!! I made this a couple of weeks ago and I am going to make it again this weekend. The only thing I did different was I did not add the clam juice and/or water, it didn't seem to need it.

Today I made green tomatoe, apple relish... SO good! Has apples, green tomatoe, onions, sugar vinigar salt clove nutmbeg cinnaomon, celeary seed, mustard seed, turamic, all spice... simmer all for an hour and a half and them jar, water bath..

I made a pork apple stew and cut up some tomatillos to add with the apples. It was great. A little tangy. Neat texture.

LOL - if I was close enough, I'd offer to come and take them off your hands. I LOVE tomatillos and prefer them over tomatoes for making salsa :)
my recipe isn't too different from above, really....but I do fry dried guajillo chiles in oil and puree them in, too. They make it a red/brown that then confuses people and no one ever believes there are no tomatoes in there! I bake the tomatillos, cut in half, on a cookie sheet till soft and edges get browned. And garlic. Lots of garlic. I LOVE garlic. Hate vampires LOL!!!

Green sauce huh? :) Joking aside, this sounds really good...very much appreciated! I have an abundance of onions this year too and still quite a few peppers so this sounds just about perfect! I will make up a batch this weekend and let you know how I did!

Green sauce!!!! I make a sauce by cooking down tomatillos with onions, peppers and garlic and putting through a strainer or food mill once it is thick..salt and pepper to taste..awesome taco sauce and great for chicken enchiladas as well...but I don't use a recipe..Just about twice as many tomatillos (can throw in green onions as well) as other ingredients. I add a big splash of lime juice to the pot and some cilantro at the end if you like it. It freezes well and I have canned it as well (either pressure can it or be careful to use alot more tomatillos than other ingredients and don't forget that lime juice. It is also wonderful over eggs! (green eggs and ham)
