Has anyone used the gluten free mix? I was trying to research the ingredients and maybe some recipes before making the investment. I can't get past the fact that most gluten free foods use xanthum gum. Though I didn't see it listed in the baking mix, is it called for in the recipes she gives?

I am really surprised how little Buckwheat is used in the majority of gluten free cooking. I'm ready to get home to practice and play more with this. SO far cookies and pancakes that taste great!

Chocolate Biscotti, from the BF's cousin

2 cups all-purpose flour ( I substituted buckwheat even)
1/2 cup unsweetened cocoa powder
3/4 tsp Baking soda
1/2 tsp baking powder
1/2 tsp salt
6 T. unsalted butter softened
1 cup sugar ( I did 1/2 cup)
2 large eggs, lightly beatened
3/4 cup drive cranberries
3/4 cup mini chocolate chips

Sift together dry ingredients
Beat butter and sugar together until smooth then beat in eggs.
Mix in dry ingredients until blended. Fold in cranberries and chips
Divide dough; put pieces on baking sheets (I spread a bit of oil)
Shap into a 12 inch long, 1/2 inch thick log.
Bake at 350 for 25 minutes; cool 20 minutes
Slice into 1/2 inch thick cookies. Stand up on baking sheet and bake for 15 more minutes
cool.

I do variations so just play. you don't need the cocoa, or if you want to use other dried fruit go -ahead.

I'd like to see your recipes, Laurie. So far, I've made bread..so,so.
I made pizza dough. OK. And, I made snickerdoodles..the kids really liked those. I had to really play with the recipe though. Used a regular family recipe, but had to adjust for the gluten free.

There is some xanthum gum actually made from a wheat medium. Go figure. I guess that I am trying to keep things more simple and there is no way to do that with xanthum gum. At least you can make bread with patience from wehat and water. I am interested in trying Mary Jane's mix so will be ordering that soon.

I'll admit that I have become quite jaded with our food system and that may be the biggest reason why I try to avoid xanthum gum. I'll post some recipes using buckwheat this weekend. I love how they come out, but I also have a lot still to play with.

Hi Erin,

Yes, the bulk budget mixes (Whole Wheat, Unbleached White and Gluten Free) all come with a booklet with 15 different recipes. The Budget Mix is really easy to work with so making up your own recipes is a snap too.

I am just starting to bake gluten free. I used a Namaste brand flour mix yesterday which had xanthum gum in it. I am curious as to why you do not wish to use xanthum gum. I don't know much about it.

I just used her gluten free mix and it was GREAT..I love the fine texture and it seemed very high-quality ... I would definitely buy it again. I wish I could get it in large quantities... It is about 2 cups for the small bag. I haven't seen xanthum gum in any of her recipes so far, but I used an unrelated recipe for what I did with it...she gives you a little recipe book in the bag and thumbing through it, I didn't see any called for that either.

Buckwheat is no gluten? I need to get some!
