When I lived in Germany anywhere you went out to eat they always served a salad and all the salads had these light tasting, pickled green beans. Does anyone know about these? Or an easy way to pickle? I've never pickled anything before but I'd sure like to have some of these green beans.

I think I found the recipe!!! I sure hope I'm helping and not making things more confusing Good luck This one looks super-dooper easy. I'm going to make some too!

GERMAN COLD-PICKLED GREEN BEANS

1 qt. whole green beans
3/4 c. vinegar
1 tbsp. salt
3 buttons garlic
3/4 c. Wesson oil
1 tbsp. sugar
1 tbsp. pepper
1 sliced onion (rings)

Put in jar and seal for 24 hours in refrigerator, turning every 3 or 4 hours. Serve cold as a relish. Serves 6-8.

I just googled "Pickled green beans" and there are a bunch of recipes to choose from out there. It looks easy enough, Get some fresh beans and give it a try =) I love pickled beans too, maybe I'll make some as well. Let us know how it turns out!

Pickled green beans are great. I can a couple of batches every year. They are real easy to do. The recipe is in the ball canning book, it pretty much consist of water vinegar, and salt along with the beans. If you can get some fresh beans I say give it a try!
