My wonderful husband has been working long hours this week. Which really mean he's getting up and out of the house really early. I made some Hearty Muffins for him so he could take them with him on his way out the door. They are soooo yummy

Hearty Breakfast Muffins

1 egg, beaten
1/2 cup of milk
1/2 cup of oil
1 cup of quick oats
1 cup all-purpose flour
3/4 cup of dark brown sugar - packed
3 teaspoons of baking powder
1 teaspoon of salt
3 medium brown bananas - mashed
1 Tablespoon cinnamon
1/2 teaspoon cloves
2/3 cup of raisins
2/3 cup of blueberries

Pre-Heat oven to 400 degrees

In a large mixing bowl mix egg, milk, oil, sugar, baking powder, salt, bananas, cinnamon, cloves. Then add oatmeal and flour. Mix together. Fold in raisins and blueberries.

Place in muffin pan, fill each cup 2/3 with batter. Cook until golden brown. About 25 minutes.

I bought a huge big bag of bananas yesterday and am going tomake these this morning. They sound good. And I guess I can freeze them? Thanks for the recipe.
