My mom delivered to us a beautiful acorn squash grown by a family friend. My husband roasted it cut in half with some butter and mashed the meat once it was roasted.

He said "This is really good! We should add more stuff like this to our diet!" Uh yes. Exactly what I have been trying to do/say for years!
