Hi girls! I love grilled cheese sandwiches - don't you? Melty salty-sweet butter, crispy-chewy crusts, ooey-gooey American cheese overflowing the edges.... there's nothing like it on a cool, autumn day! I especially like them on homemade whole wheat bread with slices of fresh tomatoes and onions nestled inside. My neighbor, however, opened me up to an entirely new world of grilled cheese sandwiches a couple of years ago: she makes them on marbled rye bread with swiss cheese, bacon and thinly sliced apples. They are to DIE for! I am just wondering - do any of you get creative with your grill cheese sandwiches? If so, how do you make yours? I just love an adventurous new twist on an old favorite! I have some different cheeses and breads on my coming up grocery list for different grilled cheese sandwiches! The first one I'm going to try(once we are back into fall weather, too warm this week) is cheddar, bacon and pickles on sourdough- can't wait!
And, it was neat to see this discussion because I just read yesterday an article in my Martha Stewart magazine that gives all sorts of yummy ideas for grilled cheese! Sharon the one with beef, havarti, and red onion jam is in there!
I would love to try something with apples, since I can walk out my back door and pick as many apples as I want! Oooo, and would love to try pears too!
I am definitely a huge fan of grilled cheese!

I recently found a copy of the Rodale cookbook (1973) and I tried this recipe for open-faced grilled cheese sandwiches (and it's delicious!)
1/4 cup skim milk powder (I used soy milk powder)
1/2 cup water
1 egg, beaten
3/4 lb. Cheddar cheese, shredded
1/4 teaspoon mustard powder
1/4 teaspoon salt
6 slices whole grain bread
6 slices tomato (optional)
6 strips bacon, partially cooked (optional)

In a double boiler, combine skim milk power with water using a wire whisk.
Add egg gradually to milk.
combine shredded cheese, mustard power and salt. Add to milk mixture.
Cook over hot water for fifteen minutes, stirring occasionally.
Cool mixture. Refrigerate before using.
When ready to serve, spread cheese mixture on slices of bread and toast them in a 350 degree oven or under a broiler, until they puff up and become golden brown.
Top the sandwiches with a slice of tomato or strip of bacon before baking or broiling, if desired.
Yield: 4 to 6 servings.

These turned out really good and would be great with homemade tomato soup. Perfect comfort food for Autumn.

Sharon, that roast beef one sounds TO DIE FOR! I've never heard of Red Onion Jam, but I bet it's deeee-lish-ee-o-so! And what a good hubby you have! Good man! :)

Catherine! I bet your Mom WAS the hit of the neighborhood! I wish I had thought of that myself! I STILL love PBJ... Maybe I'll make them as a surprise treat this weekend for the football game! GREAT idea! Hmmmm.... I bet that would be AWESOME for fluffernutters, too... Those are my husband's ABSOLUTE favorite! (Yes, we're like big kids... gotta stay young!) Maybe I'll try that, too!

This is sort of off topic but related to grilled sandwiches....my mom used to grill our peanut butter & jelly sandwiches. She was the hit of the neighborhood for that, no one else around then seemed to ever have done so, and the kids would beg her to make them LOL!!

We like Grilled Sourdough with Roast Beef, Havarti Cheese and my Red-Onion Jam. So good!!!

Grilled Cheese has always been a comfort food for me. Usually during girl time it's Grilled Cheese and Tomato Soup. This is funny; a few years ago my husband came home with some surprises for me. It was in the Fall and he brought me some Brach's Indian Corn, a card, some flowers and....a pound of American Cheese (because he knew the girl thing was coming :)) I will never forget that

When we visited Canada and stayed with my relatives (now deceased) mother and I often ate a grilled cheese sandwich at a restaurant...love them too yumm. Funny story. Once I ordered 2 grilled cheese sandwiches, but instead of telling the lady I wanted grilled cheese, I told her I wanted two CHILLED GREASE sandwiches lol. Ever since mother and I called them chilled grease sandwiches (just between us ofcourse haha)

I love carrots! What a good idea, Rebekah! I've never thought to put them on a sandwich before! Will definitely try it!

Audrey and Carole - you are SO right! Soup IS a good side! Isn't that just the best combo when you've just come in from shoveling snow in the icy cold? MMM mmm GOOD! Next to a steaming hot cup of cocoa with tiny melty marshmallows, there's just nothing like it! :)

Yum, these all sound great! I've never tried bacon before on my grilled cheese. I put onions, bell peppers, and carrots. Sounds weird, but the carrots put a whole new taste to it.

American cheese with bacon on white bread OR American cheese with a couple of slides of tomatoes put on the cheese as it melts. I agree with Audrey about having it with a bowl of tomato soup (creamy with milk).

All the sandwiches sound delicious!!

BLT's are my FAVORITE, Sarah! Second are cold meatloaf sandwiches... Third Reubens... Mmmmm.... Your ideas sound yummy, too. 'Haven't had bbq pork melts in a very, very long time... What a great sandwich during football season! 'Just put it on my list!

Everyone's ideas are so inspiring! 'Made my son a turkey melt on English muffins today - he loved it! :) Keep those great ideas, coming - PLEASE!!!

I go a little more traditional - tuna melts, croque monsieur (basically ham & cheese with dijon mustard - very French!), basil pesto with tomatoes and mozzarella, bbq pork melts, etc. I always use normal bread (in our house, thin-sliced multi-grain), but sometimes I brush with olive oil instead of using butter.

The bacon and apple DOES sound delicious. Tonight though I'm making BLTs. Not quite the same, but just as yummy!

Nothing better than a grilled cheese with a bowl of tomato soup. Thought this was the only way to make a grilled cheese but these other ways are most interesting. Think I'll be trying them myself this autumn. Swiss, bacon and apple, sounds yummy!

My girls grill leftover turkey in butter with onions, then add it to grilled bread with provolone cheese. My oldest makes grilled cheese with just about everything. She even spread chili on american cheese once cause there was only 1/2 a bowl of chili left. He younger sister and her both wanted it. She made 6 sandwiches with it and they both were happy, plus the 2 y/o who stole off with one of the sandwiches was chili covered and happy when we finally found her hidin in the bathroom with it! LOL!
