I had the opportunity to help butcher a pig a couple of weeks ago and I got the belly. I decided to try my hand at bacon, so I tried 4 different cures (regular, maple, brown sugar, and garlic/herb) and cured the bellies, then smoked them, and I sliced them up last night. I am SOOO excited! It slices like bacon, it cooks like bacon, and it TASTES like bacon! No more mystery here!

I'm like SusanScarlet and have made my own sausage but never bacon. What an delicious accomplishment!

We've made our own sausage. It was so easy I was surprised. We used purchased pork, ground it, and spiced it in several different ways - breakfast mild and hot, Italian mild and hot, and tried maple syrup sausage. We froze it in one pound bags and it has been wonderful.

The bacon from the grocery store doesn't even compare to the bacon from the butcher. How did the garlic/herb come out? I never would of thought of that with bacon.

Wow, good for you. I am impressed. I bet it tastes really good. I have had bacon in Denmark and it was so much better than the packaged stuff we find here. I bet it is like that. My mouth is watering....

Kelly, that sounds so interesting! I'd LOVE to try that someday! I'd also love to try making sausage... Today will be absolutely homegrown BLT day (minus the mayonnaise.. haven't tried my hand at that yet) since we finally got some ripe tomatoes. We will be frying up some bacon that has been naturally raised, so I can't wait to taste the difference!

Congrats. though I admit, I don't like bacon. Don't like ham either so maybe that explains it. ha. What a great chance for you though.
