Hi All,

I'm new here and wondering if it's safe to hot water can tomatoes rather than pressure canning? I've never canned a thing in my life but I want to learn and I have 2 huge bowls of peeled tomatoes on my counter!

I've only ever used a water bath to can tomatoes.... good luck!

Or vinegar-my recipe calls for vinegar! I have canned tomatoes for 40 years in a water bath with no problems. But they do need to have acid!

which has all the research based recipes that you need to begin. Tomatoes are fine for waterbath canning if you add lemon juice to ensure a high enough acidity level. that website has all the info you need. Good luck!
