I'm new here and wondering if it's safe to hot water can tomatoes rather than pressure canning? I've never canned a thing in my life but I want to learn and I have 2 huge bowls of peeled tomatoes on my counter!

Posted - Sep 01 2010 : 12:59:30 PM Or vinegar-my recipe calls for vinegar! I have canned tomatoes for 40 years in a water bath with no problems. But they do need to have acid!

Posted - Sep 01 2010 : 12:23:29 PM Please look at this website http://www.uga.edu/nchfp/ which has all the research based recipes that you need to begin. Tomatoes are fine for waterbath canning if you add lemon juice to ensure a high enough acidity level. that website has all the info you need. Good luck!
