Late last night I baked a angel food cake (boxed)
This morning I made a recipe I haven't used in a few years.
Double Boiler Icing! I remember as a kid how I LOVED this frosting!

It's my mother's 82nd birthday today and I thought it would be great to have something we all loved as a family years ago.

Thought you all might like to try it.

The recipe card I used if from my husband's grandma, written in her own hand.

Verbal instructions were to make sure to wash all pots and utensils very well before beginning.

(I forgot to do that and the first batch this morning didn't get fluffy, too bad we had to eat it to clean out the pot and start over!

Ida's Double-Boiler Icing
1 egg white
3/4 cup of sugar
1/8 tsp Cream of Tartar
3 Tbsp Water
1/2 tsp Vanilla

Combine ingredients (except vanilla)in top of double boiler, and beat to completely blend. Place over boiling water, and beat with rotary beater until mixture is fluffy and will hold a point when you lift the beater (5 to 7 mins). Remove and blend in vanilla.Then beat with a spoon til mixture is fluffy and will hold it's shape when piled up in ridges.

For Fluffy Marshmallow Icing add 3 marshmallows cut into quarters to icing immediately after removing from heat.
Beat until marshmallows are melted and icing is cool.

For Brown Sugar Double Boiler Icing. use 1 cup brown sugar inplace of 3/4 cup white sugar. Omit cream of tartar and flavoring, and proceed the same as with white sugar.


My note: Be sure the cake is ready to go as soon as the icing is ready and spread quickly and evenly before it cools too much and gets stiff.

katie-ell, Seven-minute Icing that's what my mother calls it.
She looked over the recipe and said "it' the same as mine".
She was so happy I made it. Everyone commented about it at her party.
It's amazing how food can bring back a flood of memories!

I had an angel food cake for my birthday last weekend. It's my favorite. Your recipe brought back memories for me too, especially the brown sugar frosting -- that's what my mom always fixed for me!

OMG.....did you bring back a flood of memories with that recipe!!
You see......my great aunt would make make Dad a angel food cake on his birthday. She NEVER missed one...and that cake had the best icing on it. Sadly my Auntie died before I was able to get the recipe from her.....but I KNOW that this one is it!! Except that after she put the icing on the cake...she'd sprinkle chopped toffee bars all over it. SOooooooo good!!

Yum! I was just craving a cake this weekend, and now that I know what kind of icing to put on it, I just have to decide on the cake! Do you think this would work well on a "regular" old chocolate cake? I have this vision of marshmallow icing on a nice dark chocolate cake with a big glass of milk.....and maybe a strawberry or two....MMMMmmmmmmm
