Posted - Aug 20 2010 : 12:45:34 PM Do any of you have good lentil recipes? Right now, in the Palouse they are having the lentil festival, and I may purchase a booklet that has recipes. I have heard that lentils are an excellent protein and low in cost. Thought as Fall & winter are on their way, I would get some more recipes to have on hand.
Thanks for those to whom may contribute. Maybe we can all benefit from recipes submitted.

Posted - Aug 21 2010 : 07:46:51 AM Bev, I just had a chance to check out the site you suggested! WOW! Giving its proper due, the following is a recipe for Lentil Brownies:
LENTIL BROWNIES 4 large eggs 2 cups sugar 1 cup vegtable oil 2 tsp.vanilla 1 1/2 cups flour 1/2 cup plus 2 Tbsp. cocoa 1 tsp.salt 1 cup chocolate chips 1 cup cooked lentils, cooked 40 minutes and drained 1 cup small marshmallows Beat the eggs and sugar. Add in the oil and vanilla.
Sift the dry ingredients and add to the sugar and egg mixture.
Stir in the chocolate chips,cooked lentils, and marshmallow.
Bake in a greased 9 by 13 inch pan ot 350 degrees for 35 minutes. Recipe from USA Dry Pea and Lentil Council

Posted - Aug 21 2010 : 07:41:26 AM Angela, do you measure amount for amount of cooked lentils as to hamburger? Since I don't know how much to cook, do you think I could even start mixing some cooked in with the hamburger until I am sure of it?

Posted - Aug 20 2010 : 9:59:42 PM We use lentils in place of ground beef in recipes. You throw one or two beef bullion cubes in the water to boil them, then drain and use them in hamburger helpers, or whatever. My family has eaten a lot of them and didn't even know it most times!
