Here is a great little video from the 2010 Iowa State Fair. This lady won the competition. Makes me wish for Spring as I have more violets than grass! :) Can't wait. I know we've had another violet jelly recipe. Yummy, also. It's just so fun to watch it made. The organic, simplicity makes me want to try it.

I have those violets inmy yard here and there. Perhaps I could get enough rounded up to make this jelly. I wonder what it tastes like? Do the flowers have a taste, or do they just make it pretty in color and the jelly taste is mostly from the sugar? Who has eaten some?

Jeannie, glad you saw the video. Isn't Louise Piper just a gem! Actually, I have heard the joke (hasn't everyone?) The Manly man passed away a few years ago. However, the joke lives on.

Annab, we don't have Kudzo up here in northern Iowa...yet. Mimosa jelly sounds heavenly. I just bought some of those little 4 oz canning jars. Can't wait til Spring. Just might have to make up some raspberry jelly for Christmas gifts.

Ohhh so THAT's how its done!

I bet it tastes so good!

I have heard you can also make a jelly out of kudzu blossoms. And I have personally tasted mimosa jelly

Judith - well Dakin was my maiden name. So if it is familiar, I am most likely related to them. Grandpa was Lewis, Grandma was Millie. Their parents were founding members of Beaver Creek Church and their graves are still in the little cemetery, though the church was moved a while ago. My aunt passed away just a couple of years ago and was the last one on the farm. She was Avis.

Cousin Dennis is still around that area. And I heard that another cousin retained 14 acres of the farm for a kennel of some kind saving the house. Cousin Dennis loved the area joke of the various town names nearby. Once in the paper, it read Fertile woman marries Manly man. If you are familiar with the area, you will probably have heard that joke!

Thanks for the instructions! I found it and watched Louise Piper make her jelly. That was fun.

Jeannie, Dakin is a very familiar name in this area.:) I just tried to google IPTV to try a different way to get at the video. I went to Google and typed in iptv iowa state fair 2010. The fair homepage came up. There is a search box in the upper right hand corner of page. I typed in wild violet winning jelly and searched. Then you will see articles related to this, and can get to the video. Good luck.

Judith - spent my summers at my grandparents dairy farm just outside of Joice. The best summers of my life. Dakin was their name. I loved, loved every minute there.

By the way, when I go to the link you mentioned above, iptv, it does not take me to the fair or anything. It seems like a website where you can get IT services. What am I doing wrong?

Wow...that's just like my recipe. We put up 48 half pints this spring. Guess I might have won, too :) I certainly get lots of compliments!

Louise Piper's Violet Jelly
3 cups wild violet flowers, stems removed
3 1/2 cups distilled water
1 box pectin
4 cups sugar
cheesecloth
Place flowers in a jar. Bring distilled water to a boil and pour over flowers. Let steep at room temperature 15-24 hours. Strain infusion through cheescloth-lined strainer. Allow liquid to drain fully without pressing the violet blossoms. (Pressing makes the jelly cloudy) Discard blossoms. In a very large pan, stir the violet infusion and one box pectin bringing to a full boil. Then add 4 cups sugar all at once. Stir and bring to a rolling boil for one full minute. Remove from heat. Skim foam from jelly. Ladle into hot sterile jars. Cover with sterile lids. Put jars on jar rack in boiling water bath for 10 minutes. Remove and let cool at room temperature.

Good luck. Can't wait to try to this as we have lots of unsprayed violets in the springtime.
