Has anyone made coconut milk yogurt? Mine turns out too thin to even call it yogurt!

It has a good taste, Audrey, I would just rather eat my yogurt with a spoon than drink it with a straw! I might try again, but maybe with coconut creme, although I think that would be too sweet for me and I don't need the sugar that's already in the creme. Probably my next attempt will be raw milk yogurt. Mary Jane has a great recipe, "Basic Organic Yogurt" in the Oct/Nov 2009 issue! It turned out great with whole milk. So much better than store-bought.

My husband suggested that even though coconut milk has fat, plant fat may be different than animal fat. I'm sure I don't know! Maybe canned coconut milk is too pasteurized. In her recipe, Mary Jane says not to use ultra-pasteurized milk, and that milk alternatives would produce a thinner yogurt. I just wasn't expecting it to be "drinkable"! Ha! I also wonder if store-bought coconut milk yogurt has an added thickener.

I have thought about making some but just not found the time - would be interested if others have tried and what their outcome had been... Are you going to try again Kellen???

I actually tried my first grocery store bought coconut milk yogurt this morning. I thought it was interesting but don't think I'll be getting any more, a bit too sweet for my taste. Good luck on any future attempts.
