Posted - Aug 09 2010 : 4:44:56 PM I had a ton of leftover veggies from a cookout this weekend and didn't have a clue what I was going to do with them. Then it hit me! It would be the perfect opportunity to make a Bakeover for the first time. It turned out super delicious, as soon as I finish typing this up I'm going to go have a 2nd piece.
Leftover Veggies (had been cooked in foil packet on grill)
Foil Packet #1 Potatoes Rutabaga Turnip Parsnip Garlic Butter Rosemary
Foil Packet #2 Peppers Onions Yellow Squash Zucchini Italian seasoning balsamic vinegar pepper oil
Rest of ingredients: Organic mild cheddar Elk Jalapeno Cheddar Salami Baking mix from the Lifebook Sprinkled with Italian seasonings.
If I get ambitious I'll try to post a picture on my blog of the results.

Posted - Aug 15 2010 : 12:38:46 PM haha! Yes, I can spare the recipe, just not the blueberries. Just used the rest of them to make freezer jam with! Need to go get more since I don't have nearly enough berries frozen for other uses. Anyway, all I did was this: Filling: 4 cups blueberries (fresh or frozen) 3/4 cup each of sugar and water 2 tsp vanilla In saucepan, add sugar and water. Heat on med-low until sugar is melted and it's like a syrup (won't be thick). Add the berries & heat through, stirring often & gently. Stir in vanilla. Layer on bottom of pan.
Crust: Using the recipe from the book, just add 4 Tbsp of sugar to the dry mix & follow book's recipe. Bake @ 425 for 20 minutes. Perfect! Serve with vanilla ice cream or whip cream. I don't have a bake over pan so I just use my cast iron skillet. Use whatever you have.
I served this for company Friday night and for a church picnic today. It was a big hit both times. My husband said that at church, he went into the kitchen to collect our stuff to find one of the ladies "cleaning" the skillet out. Basically, she was scooping the juice out with a spoon and eating it! Too funny.

Posted - Aug 14 2010 : 9:23:27 PM I made my own from the cookbook. I've been meaning to place an order for the genuine stuff but haven't got around to it yet. The blueberry sounds delicious, I'd love the recipe if you can spare it.

Posted - Aug 14 2010 : 7:59:12 PM Melissa, that looks really yummy! Did you use the Bake Over mix that you can purchase or did you make your own from the Cookbook? I've made 2 different ones now, a taco one & a blueberry one, using the recipe to make my own dough. It was fabulous both times! I used fresh picked blueberries that I picked that morning. The taco one is pretty self-explanatory but if you'd like to know how I did the blueberry one, I'd love to share. It was a big hit with company.
