Ok, I'm finding that yellow squash are asa prolific as zucchini...Does anyone have any recipes that use yellow squash? I thought about experimenting and using the squash in a vegetable lasagne? Think it will work?

I have the black-eye pea (a restaurant chain in Colorado and elsewhere) recipe for yellow squash casserole.E-mail me if you want the recipe

Ooooh, yellow squash!

Veggie lasagna is a great idea! A dear friend of mine made veggie spaghetti with yellow squash in it, and it was just to die for. She also put eggplants( the eggplants made it meaty, and hearty), her tomato sauce she won't give me the recipie for is in it too, also some zucchini. Gee, I'm making myself hungry.

Another great idea for yellow squash is to slice in rounds, batter with flour, Morton's Nature Seasoning, and a little bit of Vigo Italian breadcrumbs, and FRY in a hot iron skillet! Serve with cool ranch dip!
