Hello,
I was watching Paula Dean yesterday and she was baking sweet stuff. She made a wonderful bread pudding and I am not interested in the sauce she made for it. It was a brandy sauce. I dont like the taste of liquor in my baking. So I was wondering if anyone has an easy recipe for a sauce for bread pudding. I would really like to make this today.

PS. We cooked the bread & rice puddings in a pan of hot water, it helps them set and
keeps them from drying out.
Just put a cookie sheet with sides, (or a larger pan than the pudding) into the oven,
place the pudding pan inside it, and add heated water (from tea kettle) to the cookie
sheet, at least a 1/2 inch deep. Bake as directed!

When I cooked at a restaurant, we thinned canned vanilla pudding with milk,
and kept it heated (you could mike it). Served it over bread pudding, rice pudding
and apple dumplings. Worked great! EASY TOO!

Mmm, that one sounds good, Sharon! I love bread pudding and I like to mix it up, you can't go wrong with any flavoring, I think!

Deborah, here's the lemon sauce we like to make for a simple bread pudding:

1 c sugar
1 TBSP cornstarch
2 c boiling water
4 TBSP butter
2 TBSP lemon juice
1 TBSP grated lemon zest

Mix sugar and cornstarch in same pan. Gradually stir in water. Boil one minute, stirring constantly. Stir in butter, lemon juice and zest. Serve hot. Makes 2 cups.

Oh Lin, I have one! When my husband and I were first married I learned he loved Bread Pudding. I tried recipe after recipe and finally came up with one that we love. We use homemade bread in ours (makes a big difference). here it is, enjoy!



Cherry Pecan Bread Pudding

Ingredients:
½ cup chopped Pecans (optional)
½ quart Half & Half
¼ pound butter
½ cup dried tart cherries (you can use raisins instead, my honey loves dried tart cherries)
2-teaspoon vanilla 1-quart milk
Six eggs
14 ounces sugar
One loaf French bread (or one 2 lb. Loaf homemade white bread)
½ teaspoon cinnamon

Cut bread in cubes and allow to dry overnight. In a saucepan, heat the milk and half & half along with ½ of the sugar to 120 degrees. Combine the eggs, cherries, vanilla, cinnamon, and remaining sugar in a stainless bowl and blend with a whisk. Temper the warm milk into the egg mixture by slowly pouring ½ of the milk into the egg while whisking, and then pour the egg into the milk. Stir in bread cubes and soak for 5 minutes. Melt the butter and mix into the bread with a spoon. Transfer into a baking dish (10x13) and bake at 350 for 35 minutes or until center is firm.

Here's a yummy recipe:

VANILLA SAUCE
1/2 cup sugar
3 tablespoons light brown sugar
1 tablespoon flour
1 pinch nutmeg
1 large egg
2 tablespoons butter
1 1/4 cups whipping cream
1 tablespoon vanilla

For the vanilla sauce; in a heavy saucepan whisk all ingredients together (except vanilla) cook over medium heat whisking continuously for about 10 minutes or until thickened.
Remove from heat and stir in vanilla.
Serve warm or at almost room temperature with the pudding.


The nutmeg adds a really nice flavor. I found this recipe on recipezaar and have used it with Coconut Bread Pudding from Menonnite Girls Can Cook blog :)

Here is a caramel sauce recipe I use for my bread pudding:

CARAMEL SAUCE: In a heavy, medium saucepan, combine 1/2 cup butter, 1/2 cup sugar, 1/2 cup packed brown sugar and 1/2 cup whipping cream. Cook and stir over medium-high heat till mixture boils. Stir in 1 teaspoon vanilla. Serve sauce immediately over bread pudding or cool, cover and store sauce in the refrigerator for up to 7 days. Warm in microwave oven on high for 1 to 1 1/2 minutes or in a saucepan before serving. Makes 1 3/4 cups.

My grandma and mom always made a basic vanilla sauce, which is what I use too. I don't have the recipe here at work, but will get it tonight if you're interested. Very, very simple and just the right touch!!Lin
