Posted - Jul 30 2010 : 5:16:46 PM Updated, this a new challenge! Let's have a gluten free week of recipes challenge. For each week let's post what we will eat each day. I thought this would help give us ideas of some new things to cook and eat instead of the same old thing all the time. I'm trying to liven up my menu and thought it would be a fun way to do so with my farmgirl friends. Whose with me, are you up to the challenge?
Here's what I eat breakfast, lunch, dinner for the week. Breakfast:Day 1: Oven bake with two eggs and gluten free flour, agave Day 2: Chicken Sausage and Oatmeal Day 3: Oven bake and two eggs gluten free flour, coconut milk unsweetened Day 4: Turkey Sausage and Buckwheat hot ceral, butter Day 5: Oven Bake, two eggs gluten free flour
Lunch: Day 1: Beans and meat, pinto beans Day 2: Beans and meat black beans Day 3: Beans, black-eye and meat Day 4: Butter beans, meat Day 5: Adzuki beans and meat
Dinner: Day 1: Fish and vege Day 2: Meat and vege, gluten free pasta Day 3: Fish, sweet potato Day 4: Meat, vege Day 5: Fish, yucca
See why I need help? I can't have dairy, soy, corn or tomato
I was asked to share my gluten free recipes and thought I would start a thread for it and we can all share ours here. I thought I would take them all at the end of the year and make a cookbook for all who contribute. I'll try to add a recipe every few days.
Breakfast Recipes: Meat and Cheese Scones 1 Rice Flour cup flour 1 cup Millet Flour 1/2 cup tapioca or potato starch 2 tsp. xanthum gum 4 tsp. baking powder 1/2 tsp. sea salt
1/2 cup butter 1/2 cup shredded cheese 1/4 cup cooked meat/sausage/ham etc. 1 tbsp. chopped dill 3/4 cup plain yogurt 1 egg 1 tbsp. gluten free mustard optional Mix dry ingredients in one bowl cut in the butter. Mix the wet in another bowl add to the flour mixture. Mix just until moist. Form balls and put on greased baking sheet. Bake 18 to 20 minutes or until golden.

Posted - Dec 31 2013 : 08:45:24 AM I have had so many diet changes since I got the Lyme and Celiac's that I wanted to share them with you here in hopes it might help others with food allergies and restrictions like mine.
I found out that all of my food allergies and gluten intolerance is from kidney issues. You may not even know that because unless your doctor is like mine and has spent his life to researching what causes all our health ailments they only treat the symptoms.
So, the moral of this story is do a kidney and liver cleans annually from the health food store and with your doctor's approval.
After, being on natural products to clean my kidneys for the last four months, I now can eat red meat again, soy, corn, rice in moderation. Slowly adding them in my diet once every 7 to 10 days. My kidneys no longer ache when I eat red meat.
There is also a new blood type diet that my doctor has me on for Type O. It is not the D'Adamo diet and I do not know what doctor he got it from, but will find out and let you know.
I have also gotten type 2 diabetes because of the kidney problem. Thankfully, it is only temp. whew! I just have to watch my carb intake with a protein and fat and that keeps it stable.
I don't eat sugar or fruit yet of any kind.
I am thin and always have been, but my doctor says I will gain back to a normal weight by the time he has me all put back to normal!!!! Yay!
I eat meat and vegetable for breakfast. Beans and gluten free grain for lunch. If I have beans, vege. I add a meat. I do not mix grains with meat. Then dinner is meat and vegetable.
The only starchy veges I eat are sweet potato, yucca, red skin potato and broccoli. I eat a good fat like sesame butter when I eat the rice or buckwheat hot cereals.
He says I can try dairy again if I can find raw organic only!
I eat organic everything! Lamb, biscon, fish, turkey, chicken and beef. Only white fish, no fatty ones for my Type O diet.
I hope that helps you all. And, I only drink reverse osmosis water! No other beverages at this time.
He says water content plays a part in the body healing as well. He also recommends a water from Europe called Volvic. I have not tried it yet. Waiting until I am really feeling better.
No spices, only herbs. A little garlic. No citrus except lemon.

1 1/2 cup almond flour 1 1/2 cup GF flour mix 3/4 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt 1/4 tsp nutmeg 1/4 cup oil 3 tbl honey 3 eggs 1/2 cup applesauce dried cranberries. mix dry together. blend wet together. fold wet into dry and add cranberries. bake at 350 15-20 minutes. let cool a bit.

Our Easter dinner was completely gluten free. No one complained.
Marjean, I will try your scones also. I'll have to get the millet flour.

Posted - Apr 28 2011 : 07:01:56 AM Last night I made some scones and they came out great. Moist and not so crumbly as you buy. I used a GF flour mix and almond flour. !/2 of each for the recipe and applesauce. THey were wonderful. The new hubby is encouraging me to try whatever I can and is even willing to be my guinea pig. He's not GF, just me, but he liked the flavor and texture of the scones.

Posted - Feb 10 2011 : 4:37:36 PM We used to make our own nachos with meat and cheese just like you would a taco only just put all the stuff on the chips and heat up for a few minutes in the oven to melt the cheese. But, can't eat corn or tomato anymore so I make it for the DH and DD. They love it.

My Potato and Sausage Soup Recipe
5 lb bag of organic potatoes organic sausage of your choice Watkins organic garlic powder to taste Watkin organic onion powder to taste Organic chicken broth-homemade or boxed Organic half-n-half or milk 1 cup water Watkins organic rosemary 1 tsp.
Cook the sausage in a baking dish covered with water in a 375 degree oven until done. This reduces the fat off the meat and it will float in the water. Keep adding water as needed to keep the fat off. Drain off water when done.
Cook potatoes, drain. In a large stock pot add chicken broth and spices. Mash potatoes with added milk and butter, salt to taste.
Add potatoes and sausage to chicken broth and bring to low boil. Simmer on low stirring to keep from burning for 30 minutes. Yum!

I am a rather creative cook and took my two years on the gf diet very seriously. I didn't blog enough but I can track down more recipes. Posted - Dec 14 2010 : 2:03:04 PM My Homemade Split Pea Soup Recipe-soon to be famous!!! Ingredients:organic dry split green or yellow peas 1-organic gluten free chicken broth Pacific brand organic cumin two shakes organic garlic organic turmeric one shake salt to taste celery as much as you like carrots the same onion for one bag I use 5 cups of water for two bags I use 8 or to the thickness I want it to be. The more water you add the thinner it gets. Boil for about 10 minutes stirring regularly. Turn down to simmer and cook for several hours. Stir so it doesn't stick to the bottom of the pot. For extra yummieness I add organic chicken sausage that I've cooked before I make the soup with water added in the dish then I pour that broth in with the soup. Delicious!!!! Enjoy!

Posted - Nov 15 2010 : 07:56:11 AM I made my bread recipe and left out the apple sauce and made it with rosemary and olive oil. Yummy! So easy to do, I'm glad I got back in the habit of making it.
I use a combination for my fish I bake so I wanted to share the recipe for that. I use it on Haddock and flounder. Garlic to taste Mustard Olive Oil Dill Paprika Lime or Lemon Coat your dish with olive oil, sprinkle the garlic in the oil add your lemon or lime juice from one whole fruit. Sprinkle the dill and paprika on top of fish and pour the mustard over that and spread evenly. Cover and bake for 25 minutes on 400 degrees or until done. I start mine on the stove first for 2 minutes then put it in the oven. I have Princess House cookware that is stove to oven safe you remove the handles. It smells great and is yummy.
If you can have dairy, pour caesar salad dressing organic of course over the top with the mustard. Oh my goodness the smell as it's cooking will make everyone hungry!

Posted - Nov 06 2010 : 3:46:30 PM My crock pot/slow cooker bread recipe. I'm making a loaf tomorrow. They come out so moist. This recipe can be changed as you need to. Apple Bread 1 cup all-purpose flour 1 1/2 teaspoons baking powder 1 teaspoons apple pie spice 1/4 teaspoon salt 1/8 cup agave optional 2 tablespoons vege oil or butter 2 eggs 1/2 cup organic sugar-fre applesauce 1/2 cup nuts, optional
Grease a 1 quart round oven safe casserole dish. Set aside. 2. Combine all dry ingredient in med. bowl. 3. Combine wet ingredients and add to center of dry ingredients. Stir until moistened. 4. Pour mixture into dish. Cover tightly with greased foil, greased side in. 5. Place this dish in your slow cooker/crock pot and pour 1 cup warm water in crock pot, around dish. 6. Cover and cook on high for 1 3/4 to 2 hours or until done. Cool 10 minutes and invert on plate.

Posted - Oct 28 2010 : 07:10:45 AM I've been pullin gout the cookbook the last few days. I made chicken with dried cherries, olives and chili; poached sole, polenta cooked in chicken broth with veggies, lentil soup with amaranth, apple with peanut butter (one of my favorites), salad with salmon or chickne, and quinoa in almond milk.
I made some granola for the BF, but it wasn't any I could have, drat it. I need to work on that. I did make an apple crisp using buckwheat flour and that came out good.
Buckwheat is my new to try item. I've just done a few basics and want to try some other dishes that normally call for wheat.

Posted - Oct 13 2010 : 10:41:31 AM I had a lot of company so was cooking a lot separate for me but did some things like corn muffins (using buckwheat instead of the flour) that they also ate. Made Chili, meatloaf, and lasagna with rice flour pasta. Everyone loved the lasagna. wraps - turkey or beef with cheese in a swiss chard leaf. Egg muffins for breakfast (putting veggies and a little cheese in a muffin tin then scrambling up egs and pouring over the top.) leftovers, nuts, apples, carrots

I'm going to make bread tomorrow. Alee's post got me wanting some fresh and hot out of the slow cooker!

Posted - Oct 12 2010 : 4:09:14 PM Here's our menu for the next week, I'm afraid it does have a lot of corn this week. I have celiac disease, my youngest child is allergic to Milk,wheat,beef, and pork. We're still uncovering stuff, elimination diets and blood tests and we haven't started on the other two members of the family yet!
Breakfasts- options are gluten free cereal with coconut milk or raw milk,scrambled eggs, gluten free/df waffles, muffins of some kind (this week is pumpkin chocolate chip from here http://karinaskitchen.blogspot.com/2010/10/gluten-free-pumpkin-muffin-recipe.html turkey bacon, and turkey sausage.
Lunches are leftovers or sandwiches on gf bread, and I make a gluten free/dairy free pizza so my son doesn't have to miss out on "pizza day" at his school each week
Dinners: Roast chicken is on the menu usually weekly, leftovers go into other stuff baked potatoes with broccoli and cauliflower and daiya cheddar cheese Polenta casserole Dr. Praeger's gf fish sticks Brown rice pasta with sauce tostadas with refried beans and diy toppings. We also have stir fry with peanut sauce on the menu, and sometimes quiche from the Pamela's all purpose baking mix with whatever veggies are left laying around.
Here's my polenta casserole recipe, it's tweaked from the back of an organic grits box. One of our favorites....
1 Tbsp. oil 1 small onion, diced 1 cup frozen corn 1 can black beans, drained 1 cup or so of chopped zucchini 1/4 tsp. cumin 1/2 tsp. chili powder 2 Tbsp. butter or earth balance 1 Tbsp. flour 2 cups of milk or milk sub. 1 cup organic yellow grits 1- 1 1/2 cups grated cheese
Saute onions and other veggies until tender in a skillet, add beans, cumin and chili powder and heat thoroughly. Melt butter in a saucepan. Stir flour into the butter in the sauce pan, then slowly add milk and grits. Stir until thick. Mix in veggies from skillet and 1 cup cheese. Pour into an 8x8 baking dish and sprinkle with remaining cheese. Bake in preheated oven at 350 for 40-45 minutes.

Posted - Oct 10 2010 : 3:34:55 PM Well Laurie I made my own flat bread pizza crust and topped it with butternut squash and turkey sausage. It was fantastic. Using the sausage was the key. I don't season my meat very much so this made it perfect. I had half for dinner and the other half for breakfast the next morning.

This morning I had chicken sausage (organic) with yucca fried in olive oil. Yummy! Later in the day I'll have a protein shake with Goatein by Garden of Life! And, I've gained 1 pound somehow! Yippie! I hope it stays on is all. I'm really trying to add more protein and good fats to see if my body will digest it and use it and not just burn it off or not absorb! Fun, fun, fun being me!
