Now, what shall I do with them? They're number twos, so canning is in their future. I think I want jam. or syrup. or both? This is what I hate about canning!

Both is great and easy to do at the same time. I just processed up some apricots. Once I took out the seeds I cooked everything down. Then I strained out most of the juice and made syrup with that. The remaining pulp is thicker and make a great jam! Two for one. Hmm, I love nectarine and peaches haven't quite come in yet for us - mid-august and mouth is already watering.

Oh, and I bet you could do the peach BBQ sauce I posted using your nectarine instead. That was a big hit around here.
