I had to rescue my cabbage from this awful heat. Last night I cut them all out and chopped em up and put em in a 5 gallon crock and layered a little pickling salt and smashed em with a potato masher. Then I covered them with a large bag full of water. I made this last year and it turned out great except one thing. The recipe had a mis-print that said 3 cups salt instead of 3 TBL. Wow, was it salty! Hopefully it turns out good. After fermenting, I can it. I love it...must be my German side!

You can buy them at hardware stores, just make sure they are food grade plastic.

Where do you get a food grade bucket? The crock we seen last week had already sold. They had another one, but it was huge! I would rather have a smaller one, but a bucket would get us by till we found what we wanted.

My sauerkraut is happily fermenting away! The best room temp is around 72 and don't bother it, just let it go.
Also, you don't have to pressure can it, you can water bath it. I just pressure can it to have peace of mind.

The BF and I were just talking about kraut too! I pulled one head from his garden that was starting to split and we have several others ready to go. I like the idea of the 5 gallon bucket and water bag for weight. I love this website. You are all the best.

Angela, if you don't have a crock, a five gallon food grade bucket will work. Have fun with your kraut!

Thank you so much! My middle daughter is so excited and wants to make kraut tomorrow. She pick out, planted, and has helped with the weedin of our cabbages this year. She likes the purple in her salads and wants to do somethin special with some of the green heads. Now she knows what she wants to do with it. We have a meat slicin machine and she wants to use it to prep her cabbages for the kraut. I have to go to town tomorrow and pick up a crock from the little junkin shop there. I guess I'll be cannin her kraut in 6 weeks!

I leave it ferment for about 6 weeks. I found the issue of MJF magazine with the sauerkraut in it! It is Aug/Sept 2009 on page 60. That is how I got the idea for the bag of water instead of a plate and rock to weight it down with. I pressure can it by cold packing and pouring boiling water into the jars. Pressure can at 10lbs and 25 minutes for pint jars.

Diane, I forgot to ask you how long you leave yours? And how do you can yours?

Lisa, it is good, isn't it. Next time I will not put much ginger. Seems like every bite I take I get ginger. I like ginger but not that much. And no radish either. I don't like much spice. I am so glad you liked it too. But too bad hubby doesn't. Mine really doesn't either. I think he thinks it's too strange. Of well. More for us!

I have been GROOVING on my kimchee. I have made several batches & each time make it spicier.. Hubby hates it so more for me!.. & not many calories either.

Diane, that sounds so good. It's a good thing you caught that little mistake before ya did it again! Yeah, that's a lot of salt. I would love to have a big crock. I make mine in quart jars and let them sit about a week then refridgerate them.

MaryJanesFarm magazine had an article on fermenting vegetables including kraut. I don't remember which issue it was. I will look it up after I get out of work and post it here.

Here is a link to a blog about sauerkraut. I don't use the onions or seeds, but it is good either way. Instead of a plate and rock...I use a heavy plastic bag full of water and tightly sealed to hold down my kraut.

Mmmmmmm....I love the stuff! My husband gets annoyed when I eat it because he can't stand the smell. And he calls himself German!

I'd love your recipe too! Then I can stink up the kitchen even more!

Is that all you do to make kraut? I've never made it, but I am startin to worry about my cabbage. My family loves kraut and dogs, but the kraut is so darned expensive I only do it 2 or 3 times a year. I don't have a recipe for kraut, could you share yours with me?
