Do I absolutely need cilantro? I want to make enough for now, not to can several jars. My cilantro went to seed very early due to the extreme heat. I really don't want to drive to town just for cilantro. Will it change the taste that much?

They are the same plant. They can be interchanged. The name coriander came from the European users of the plant and cilantro came from the South American users of the plant. That is what I learned when I went to live in Scotland and being a Texan and loving Tex-Mex foods I was horrified when I could not find cilantro. Luckily there was a group called the American Women's Association and some of them had lived all over the world. One of them owned a Mexican Rest. in downtown Aberdeen Scotland. Having dinner there one evening I was whining about the fact that I could not get cilantro and she told me that coriander is the same plant. They sold fresh coriander leaves in the markets there and yup cilantro. I don't know about the seeds, overseas I bought fresh or dried coriander leaves and here I buy cilantro. Can't say that I have ever bought coriander seeds before.

Beth, I know that cilantro gone to seed is corindar but I did not know that the flavor was the same. I always thought of cilantro as an herb and corindar as a spice. Don't know of any recipes that are interchangeable. Tell us more?????

I dont know about the taste for cilantro being genetic because I HATED it until about 2 years ago and now I like it.

Its interesting that I love cilantro in asian foods, but hate it in mexican foods.

You probably know this but cilantro and coriander are the same thing. Do you have any dried coriander.

You can substitute flat leaf parsley for the cilantro. My recipe calls for basil, parsley and cilantro. My cilantro always goes to seed before the tomatoes and peppers are ready. If I am going to can the salsa, I sometimes use dried herbs.

I made our salsa both ways. I just made 2 quarts with fresh cilantro. I have to say, I do like it the way I made it with ground coriander better. I used green cayenne and they had just as much flavor as when they are red and ripe! I used 3 types of peppers too. I have to say that I will need a bigger garden if I plan to can salsa for the winter.

My friend gave me canned salsa which was good on its own without cilantro in it...but I like to add fresh cilantro to salsa that has been canned to freshen and brighten the flavors. Whether it be home canned or a jar from the store.

Just trivia. Did you know that to like or dislike cilantro is actually a genetic thing. So if you don't like cilantro that isn't going to change. I learned that on some science show years back and found it interesting. My youngest Son has the dislike gene the poor thing.

I never use cilantro. I like oregano. My family comes from Spain and thats what we use.

No, Even though I really really like cilantro, I have never used it in my canned salsa because part of my family thinks it tastes like dirt. Sooooo sad.
