Posted - Jul 24 2010 : 08:37:34 AM We've had a good crop so far and I've frozen quite a few bags of loose whole berries, have made raspberry concentrate for juice and jam and am planning on making and freezing some raspberry bread. Our late berries will be a good crop. What else do you do with them?

Posted - Jul 27 2010 : 6:52:08 PM I have wild ones growing all over my property and made a yummy pie yesterday! I used to make a three berry jam, but pie was calling me this year!

AND........almost forgot about my punch experiment.
At the next social function you hostess, make this for a nice refreshing drink.
I took a tupperware circular jello mold ring and in it put pureed raspberries and blueberries. To this I also added seltzer water for fizz, a dark rum and triple sec. All this was blended in a blender and poured into the jello mold. This was frozen overnight. Can also be consumed like this but watch out, cause the fiber in the berries will sneak up on you the next day and it's so good, a small sip may not be enough!
Next day for the punch I took a large can of 100% pineapple juice, 1/2 a carton of orange juice, 1/2 a 2 liter of diet sprite, added more rum and triple sec to taste and plopped in the ice ring. The alcohol can certainy be omitted if young kids wish to partake.
The ring will last longer if the juices and soda are well chilled ahead of time.

Posted - Jul 26 2010 : 01:45:08 AM Thanks for the ideas. I hope to get a chance to try Sharon's pie recipe this week. I like the idea of using that many berries at once and it sounds fabulous. I had kind of made up a raspberry syrup recipe that we've used on ice cream but it was just a small batch. This bigger batch could be canned so thats now on the list too. We had a lot of smoothies last summer and I'd kind of forgotten about them, thanks for the reminder, Anna.
Raspberry Bread Grease 8x4x2 loaf pan, line with waxed paper and grease that too. Pre-heat oven to 325 degrees. Mix together the following and set aside. 2 cups flour 1/2 tsp salt 1 tsp baking powder 1 tsp baking soda
Cream together the following ingredients. 1/2 cup soft butter 1 cup sugar 1/2 tsp almond extract
Combine flour mixture, creamed mixture and 1 cup fresh raspberries Mix only till blended.
Put in pan, smooth. Bake 50-60 minutes. Leave in pan for 10 minutes before you take it out. Let stand for one day before cutting.
Comments: If you let it mix too long it gets kind of a blue color but still tastes good. I was worried it would be really crumbly but it wasn't a problem, and we couldn't resist cutting it soon after baking.

Posted - Jul 25 2010 : 07:19:21 AM I too have raspberry plants. What started at 8 have now spread and mushroomed into a nice patch. I pick about a quart each evening and freeze them too for later use in jams that I will sell around the holidays.
I got inspired when I got tired of buying someone elses at the local health food store at 8.00/half pint.
Have made 3 pies theus far, mixed with wild blackberries.
Would you be willing to pass along the raspberry bread recipe? That sounds heavenly!
And don't forget the syrup can be drizzled over ice cream or berries incorporated into smoothies and rasbpberry ice cream itself! |

Here is something I have to make every year for my husband :)
Fresh Raspberry Pie
5 cups fresh raspberries, divided 1/3-cup water ¾ cup sugar 7-½ teaspoons cornstarch dash of salt 9 inch pastry shell, baked
In a saucepan, crush 1 cup of berries. Add water; simmer for 3 minutes. Strain, reserving juice; discard pulp and seeds. Add enough water to juice to measure 1 cup liquid. In a saucepan, combine sugar, cornstarch , and salt. Slowly stir in raspberry liquid. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat and cool slightly. Place remaining raspberries in pastry shell; pour glaze over top. Refrigerate for 2-3 hours or until set. Serve with whipped cream if desired. Yield: 6-8 servings. ***********************
I also use this recipe with raspberries instead of blackberries and make Raspberry Syrup :)
Blackberry Syrup
1. Lightly mash:
approximately 8 cups blackberries (enough to make 3 1/2 cups of juice)
2. Bring berries to a boil in a large saucepan.
3. Press the berries through a fine-hole colander to extract the juice.
4. In an 8-quart pot, combine juice with:
1/3 cup real lemon juice
5. Bring to a boil.
6. Add:
8 cups sugar
7. Stir constantly to dissolve sugar.
8. Bring to a full rolling boil for 10 seconds.
9. Remove from heat and skim any froth from the top.
10. Ladle or pour into heated, cleaned sterile Mason jars and cap. Turn jars upside down for 5 minutes. Then turn right side up again. Make sure jars "ping" to seal.
Makes 5 pints
