I have taken art/craft projects to our county fair but am interested in trying baking and canning this next year.

Does anyone know a good source of info on qualities used for judging? Here for jam it is color first, consistency second and flavor isn't even checked unless the other qualities are met.

It depends on what your fair board wants to include. In my county the canning class is by visual inspection only. They never open the jars. The baking class is really strict. They have a list of criteria, crumb, texture, color, firmness, moistness, smell, taste, appearance, and uniqueness of recipe. I'm a little overwhelmed with the list, but I have decided to just focus on crumb, moistness, and flavor, the rest will take care of itself.

Contact your local fair office and ask them for the judging criteria. They should have it or be able to tell you who would.
