Posted - Jul 23 2010 : 11:59:28 AM The only canned broccoli I was happy with (I TRY canning just about everything at least once..and since I LOVE broccoli and have had some great luck with it some years in my garden) was pickled broccoli..like in mixed pickled veggies. I usually do some celery, carrots, broccoli, bell pepper and cauliflower in mine but you can add any veggies and use a brine you would use for dill pickles..yummy and more crisp and not as strong and mushy as it is if you just can it regular. Have fun!!!

Posted - Jul 22 2010 : 3:01:33 PM I think it would be really overcooked if canned. At least for me. The blanch and freeze method leaves at least little crunch! Drying it would be very handy!
