I'm looking for ways to use tomatoes in dishes I can serve right away or freeze for later. (I know some do not like to freeze tomatoes, but I'm okay with it in the right dish.) Anybody want to share?

Here's a recipe I adapted today from one that uses canned crushed tomatoes:

***Fresh Tomato Basil Cream Soup***

Ingredients:
2 tablespoons olive oil
2 cloves garlic, minced
1/2 to 1 cup finely chopped onion
3 to 4 medium size tomatoes, crushed (do not drain!)
3 to 3 1/2 cups chicken broth
1 1/2 cups half & half or cream
1/2 cup fresh basil, chopped
salt
pepper

Procedure:
1. In a stock pot, heat olive oil over medium heat. Add chopped onion and minced garlic; saute for about 5 minutes.
2. To the stock pot, add crushed tomatoes with their juice and chicken broth; simmer for 20 minutes.
3. Add half & half or cream and chopped basil. With an immersion blender, blend soup until all ingredients are smooth or chopped fine for easy spooning. Salt and pepper to your own taste.

I LOVE fresh tomatoes. I take and dice up fresh tomatoes, red onions, & avocadoes. I mix the chopped veggies with cilantro, fresh minced garlic, salt & pepper to taste~Great with tortilla chips. I also saute up fresh diced tomatoes, chopped onions and garlic to toss over sauteed zucchini strips.

I just made this the other night. It was delicious, simple and nutritious! :)
Cook whatever kind of pasta you want al dente. I used spaghetti last time. Reserve about 1 cup of pasta water.
Saute minced garlic in olive oil for 5 minutes over medium heat. Add diced, fresh tomatoes and cook, stirring frequently. Then add in fresh basil leaves, torn in half and stir to combine. Stir in cooked pasta and some of the reserved pasta water to mix. Add fresh grated parmesan on top, serve immediately.
I'm sorry there's no measurements. I just judge by how many of us will be eating this!

I love this simple salad recipe.

Slice fresh tomatoes. Put in a glass 9x13 and sprinkle with EVOO, fresh ground pepper, basil, garlic, and any other spice you may enjoy. Do this in layers until all the tomatoes are in. Put in refrig until chilled.

Great on burgers or sandwiches or just as a light salad with a meal.

I'll share my favorite tomato recipe. It comes from one of my favorite books, it's called An Omelette and A Glass of Wine by Elizabeth David. It's a recipe she got from a Tuscan woman on one of her many travling/eating adventures. It's called Giulia's Tomato Sauce and Dry Rice:

"... a dish of dry rice cooked in the manner of a pilau, Giulia used to serve the simplest possible tomato sauce. She sliced ripe tomatoes into a bowl..., mixed them with olive oil, wine vinegar, salt, pepper, and a scrap of onion. The important points are to prepare the mixture two hours in advance, and immediately before serving to stir in a pinch of sugar.
For the (rice) use long-grain rice. Put half a small onion in a deep saucepan or casserole with olive oil and butter. When the onion turns pale gold, extract it, throw in (your rice) and let it cook until it turns a pale blond colour; now pour in salted water or broth, and cook, covered, for 20 minutes. 'Take care that the rice is not too liquid...' (I take the lid off the rice when the 20 minute timer goes off and turn off the burner, evaporation will do the rest)...'when cooked turn it on to a serving dish and on top put, here and there, some flakes of butter and some grated cheese (use whatever you have on hand here!). ...'the contrast of the hard hot rice and the cold tomato "salad" is absolutely delectable.'"

Try this dish you will not be disappointed! I use cherry tomatoes from my own vines (don't try this with store bought toms just wouldn't turn out the same). I also add the sugar to the 'salad' when I make it instead of doing so before serving, I like it good and disolved. Oh boy am I getting hungry now! I look forward to this dish every year like no other!

I make a 'sauce' from cherry tomatoes that is pretty good. You destem and wash them, then cut in half. In a large pan or skillet put a little olive oil, a diced onion, some minced garlic, a little rosemary, and some basil. You can also add any other spices you like. Cook on low to medium low stirrin once in a while till the tomatoes are really soft and it's startin make a sauce like appearance. You can then throw in any precooked meat you might like. My family likes smoked sausages diced up. Then it's ready to put on rice, noodles, or any kind of bread. I have even made it for spaghetti squash. The cherry tomatoes make it very sweet.
